Yield Makes about 1 cup

Number Of Ingredients 8

1 teaspoon finely chopped uncooked bacon (about 1/4 slice)
6 tablespoons fresh orange juice
1/2 cup nonfat sour cream
1 1/2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
3 tablespoons chopped white part of scallions (about 3)
1 large garlic clove, minced
1 teaspoon firmly packed brown sugar

Steps:

  • In a small heavy skillet cook bacon over moderate heat, stirring, until crisp and remove skillet from heat. Add orange juice to skillet and scrape up brown bits. In a blender blend bacon mixture, remaining ingredients, and salt and pepper to taste until smooth. Dressing keeps, covered and chilled, 1 week. Serve dressing with crisp lettuce, sliced tomatoes, or potato salad.

Tips:

  • For a healthier version of bacon mustard dressing, use low-fat mayonnaise or Greek yogurt instead of regular mayonnaise. You can also use light sour cream or buttermilk.
  • If you don't have Dijon mustard, you can use yellow mustard or horseradish mustard instead. However, Dijon mustard has a more complex flavor and will give the dressing a richer taste.
  • To make a vegan version of bacon mustard dressing, use vegan bacon bits or tempeh bacon instead of pork bacon. You can also use a plant-based mayonnaise or yogurt alternative.
  • To add a little sweetness to the dressing, stir in a tablespoon of honey or maple syrup. You can also add a teaspoon of brown sugar or molasses.
  • For a more tangy dressing, add a tablespoon of apple cider vinegar or lemon juice.

Conclusion:

Bacon mustard dressing is a versatile dressing that can be used on salads, sandwiches, and grilled meats. It's also a great dip for vegetables or chips. With its smoky, tangy, and creamy flavor, bacon mustard dressing is sure to be a hit at your next party or gathering.
