1/4 c skim milk

1 package (8 oz) cream cheese, softened
1/4 cup butter, softened
2/3 cup golden raw cane sugar replacement made with erythritol and monk fruit extract
1 can (15 oz) pumpkin puree
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla
1/2 cup heavy whipping cream

Steps:

  • Place almond and coconut flours in freezer 30 minutes.
  • In food processor, pulse chilled almond and coconut flours, xanthan gum and salt until combined. Add 1/2 cup butter and 2 oz cream cheese; pulse 5 to 7 times or until mixture looks like coarse crumbs. With food processor running, quickly pour beaten egg through feed tube, and process a few seconds until dough begins to come together. Remove dough; shape into flattened disk.   • Flip dough into 9-inch pie plate. Peel remaining parchment paper off dough. Gently press dough into pie plate, and crimp edge.

2 pkg (8 oz. each) low fat cream cheese
2 tsp almond extract
1 can (21 oz.) cherry pie filling & topping
2 boxes (4 - 4 1/2 cup serving size each) no sugar/no fat vanilla pudding & pie filling
1/2 cup 2% milk
2 9- in ch graham cracker pie shells

Steps:

  • 1. In a bowl cream together 1/2 of the evaporated milk and the cream cheese and the almond extract.
  • 2. In another bowl or a blender (I prefer a blender on puree) mix together the cherries and the rest of the evaporated milk, until light and airy. Add the cherry mixture to the cream cheese mixture (mixing a low speed increasing speed until well mixed.)
  • 3. Slowly add the 2 boxes of vanilla pudding using the 2% milk to keep a consistency that will be light and fluffy. (Usually mix another 2 minutes.)
  • 4. Add to pie shells, refrigerate at least 4 hours, and then serve with favorite topping.
