This recipe supposedly earned its name because it is SO addictive and I agree! I absolutely love this stuff. You can just eat it with a fork or make lettuce wraps out of the mix. Simple and DELICIOUS! I say 4 servings here but really, my husband and I could polish off the batch with no problem!

CREAMY KETO COLESLAW

Creamy Keto Coleslaw image

This creamy, zesty keto coleslaw is a fan favorite and is ready in just minutes!

Provided by Marley (Sister Sidekick)

Yield 6 servings

Number Of Ingredients 8

14 oz. bag coleslaw mix
3/4 cup mayonnaise
3 tablespoons erythritol, confectioners (or your preferred sugar substitute)
1 tablespoon apple cider vinegar
1 1/2 tablespoons lemon juice (I prefer freshly squeezed)
1 teaspoon dijon mustard (like Grey Poupon)
1/2 teaspoon black pepper
1/2 teaspoon celery salt

Steps:

  • In a medium to large bowl, whisk together mayo, erythritol, vinegar, lemon juice, dijon mustard, black pepper, and celery salt.
  • Add the bagged coleslaw and mix well to combine. Adjust salt & pepper to taste, and enjoy!

Tips:

  • Slice cabbage thinly: Thinner slices will result in a more tender and flavorful slaw.
  • Use a variety of cabbage: For a more complex flavor, use a combination of green and red cabbage.
  • Add other vegetables: For a more colorful and nutritious slaw, add other vegetables such as shredded carrots, bell peppers, or cucumber.
  • Use a flavorful dressing: The dressing is what really makes the slaw, so use a flavorful combination of ingredients. A simple vinaigrette made with olive oil, vinegar, and Dijon mustard is a good option.
  • Let the slaw rest: After dressing the slaw, let it rest for at least 30 minutes to allow the flavors to meld.

Conclusion:

Low-carb slaw is a delicious and healthy side dish that is perfect for summer cookouts and potlucks. It is also a great way to get your daily dose of vegetables. With so many different variations, there is sure to be a low-carb slaw recipe that everyone will enjoy.
