Here is a classic French recipe. Back in my cheffing & catering days, this was always a winner. You can serve this as an appetizer or as a meal. Here you have salmon croquettes served with my avocado basil dressing atop a bed of baby arugula, which is lightly tossed in olive oil.

1 lb salmon, cooked and shredded
2 eggs
1/3 c mayonnaise
1/2 c grated parmesan cheese
1/2 c almond flour
1/4 c white onion, minced
3 Tbsp fresh basil, chopped
1/2 tsp garlic powder
1 tsp red pepper flakes
1 tsp sea salt
1 tsp freshly ground black pepper
2 Tbsp avocado oil
1 freshly squeesed lemon juice

Steps:

  • 1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • 2. Cook the salmon for approximately 20 minutes or until cooked throughout. Once cooled, shred the salmon in a large mixing bowl.
  • 3. To the bowl add the eggs, mayonnaise, parmesan cheese, almond flour, white onion, basil, garlic powder, red pepper flakes, salt, pepper, and mix well. Form into 6 patties.
  • 4. In a large skillet, over medium heat, add the avocado oil. Cook for approximately 2 minutes on each side, or until golden brown.
  • 5. Serve with freshly squeezed lemon juice.

7 ounces pink salmon
1/4 cup onion, diced
2 tablespoons lemon juice, freshly squeezed
Tabasco sauce, several dashes
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup ground flax seeds
1 egg, slightly beaten

Steps:

  • Add all ingredients to a bowl. Mix well using your hands. Let rest for about 10 minutes to allow dry ingredients to absorb the wet. Don't leave it much longer than that or they'll be too dry.
  • Heat a skillet over medium high heat. Add oil, preferably olive oil for the flavor. Add patties to the skillet allowing them to cook about 3 mnutes per side; once you place them in the hot oil, leave them alone for 3 minutes to let a crust form without being disturbed and they'll be much easier to flip.
  • Remove from heat, plate and serve with your favorite sauce.

1 (16 ounce) can pink salmon or 1 (16 ounce) can red salmon
2 eggs, lightly beaten
1/4 cup onion, chopped
1/2 slice low-carb bread
2 teaspoons lemon pepper seasoning, approximately

Steps:

  • Pick through salmon taking out bones and skin; break up chunks with fork.
  • Beat eggs with fork; add to salmon.
  • Put half slice of low carb bread in food processor and pulse until crumbly.
  • Add bread and onion to salmon-egg mixture.
  • Mix lightly.
  • Spray frypan with vegetable spray (Pam).
  • Make 4 patties and place in frypan.
  • Sprinkle liberally with lemon pepper seasoning (very important ingredient for flavor).
  • Fry patties lightly, flip and fry other side, approximately 10-15 minutes total.

1 egg
2 Tbsp mayonnaise
2 Tbsp parmesan cheese
1/4 tsp lemon pepper
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp garlic powder
dash(es) black pepper
dash(es) cajun or creole seasoning
4 Tbsp olive oil for frying
4 Tbsp butter for frying
1/4 c mayonnaise for sauce
2 Tbsp dijon mustard for sauce

Steps:

  • 1. In a medium to large bowl, combine all ingredients except olive oil and butter. Use as much mayo that you need to hold the mixture together-I used almost 2 Tablespoons.
  • 2. Heat a nonstick pan over medium high heat and add 2 T. butter and 2 T. olive oil just a bit.
  • 3. Form patties the size of your palm, patting to keep mixture together. Place 4-5 in oil/butter in heated pan and let brown on one side, about 3 minutes. Turn only once and let brown on the other side, turning down heat if browning too much. Remove to plate. Repeat with the other 2 T. oil/butter, until all patties are browned.
  • 4. In a small bowl mix sauce ingredients, using as much mustard as you like. Serve with salmon patties.

1/4 cup minced onion
