3/4 cup stevia/erythritol granulated sweetener
1/2 teaspoon unsweetened cocoa powder
1 teaspoon instant coffee granules
2 egg yolks
2 1/4 cups heavy cream (quantity divided)
1 teaspoon pure vanilla extract
3/4 cup good quality Irish whiskey

Steps:

  • In medium saucepan, whisk together the stevia/erythritol granulated sweetener and cocoa powder until cocoa powder is completely combined and no lumps remained.
  • Whisk in instant coffee granules.
  • Whisk in egg yolks to make a paste. Add 1 cup of cream very gradually, about a tablespoon at a time. Reserve remaining 1 1/4 cup cream.
  • Heat over low heat to medium-low heat, whisking frequently until mixture has thickened slightly. This occurs at about 200º F. Do not allow mixture to boil. Remove from heat and allow to cool.
  • Whisk in the remaining 1 1/4 cups cream, vanilla extract and whiskey.
  • Store refrigerated in a tightly sealed glass jar.

½ cup unsweetened almond milk (or flax milk)
⅔ cup allulose (* to taste)
1 tbsp cocoa powder
1 tsp instant coffee
1 cup Irish whiskey
1 tsp vanilla extract
1 tsp almond extract (or sub more vanilla extract)

Steps:

  • In a saucepan over medium heat, combine the heavy cream, almond milk, allulose, cocoa powder, and instant coffee. Bring to just a simmer for about 20 minutes until reduced by 25%. Do not boil!!!
