BAKED SPAGHETTI SQUASH

Baked Spaghetti Squash image

Spaghetti squash is easily prepared in the oven--just cut it in half and bake it until the skin is easily pierced with a fork. You can then use it as a low-carb pasta substitute or turn it into salads. I often just eat it simply with some Parmesan cheese and olive oil. If you want you can season it before you bake it, but I usually spice it up later.

LOW-CARB SPAGHETTI SQUASH

Low-Carb Spaghetti Squash image

Strands of spaghetti squash are tossed with a cooked mixture of Italian sausage, onion, sweet peppers and spaghetti sauce. The mixture is piled back into the squash shells and sprinkled with grated cheese to bake.

Provided by shawnajean

Categories     Low Cholesterol

Time 55m

Yield 4 serving(s)

Number Of Ingredients 8

1 (3 -4 lb) spaghetti squash
16 ounces Italian sausage
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
1 cup onion, chopped
4 garlic cloves, minced
2 cups spaghetti sauce
1 teaspoon oregano

Steps:

  • Cut squash in half lengthwise, remove seeds. Place squash, cut side up, in a microwave-safe dish with 1/4 cup water. Cover with vented microwave-safe plastic wrap; cook on high for 7-10 minutes, depending on size. Add more cooking, 1 minute at a time, if necessary. Let stand 5 minutes. With fork "comb" out strands. Do not discard shell. Saute sausage, bell peppers, onion, garlic in a large skillet over medium-high heat until sausage browns and vegetables are tender. Mix in spaghetti sauce and dried oregano or Italian spices. Mix squash strands with sausage mixture. Spoon filling into squash shells. Place filled squash shells on baking sheet. Sprinkle with grated cheese. Bake uncovered until heated through, about 20 minutes.

Tips:

  • Choose the right spaghetti squash: Look for a spaghetti squash that is firm and heavy for its size, with a smooth, unblemished skin.
  • Prick the squash before baking: This will help to prevent it from exploding in the oven.
  • Bake the squash until it is tender: The squash is done baking when a fork can easily pierce the flesh.
  • Let the squash cool slightly before handling: This will make it easier to scrape the flesh into spaghetti-like strands.
  • Use a sharp knife to scrape the squash: A dull knife will make it difficult to get clean, even strands.
  • Add your favorite sauce: You can use any type of sauce you like with spaghetti squash, from a simple tomato sauce to a creamy Alfredo sauce.
  • Top with your favorite toppings: Some popular toppings for spaghetti squash include Parmesan cheese, cooked chicken, and vegetables.

Conclusion:

Low-carb baked spaghetti squash with garlic sage cream is a delicious and healthy alternative to traditional pasta. It is easy to make and can be customized to your liking. With its mild flavor and versatile texture, spaghetti squash can be used in a variety of dishes, from simple side dishes to hearty main courses. So next time you are looking for a low-carb meal that is both satisfying and delicious, give spaghetti squash a try!
