ASPARAGUS PENNE

Asparagus Penne image

Penne and delicious asparagus, highlighted with cherry (or grape) tomatoes. Plunk em' in, and just devour!

Provided by Andi Longmeadow Farm

Categories     One Dish Meal

Time 15m

Yield 4 serving(s)

Number Of Ingredients 9

6 ounces penne pasta
1 tablespoon olive oil
1 garlic clove, minced
1 lb thin asparagus, trimmed and cut into 1-inch pieces
1 cup cherry tomatoes
1/2 cup frozen peas (or fresh if you have)
1/2 cup vegetable stock
1 cup grated parmesan cheese
1 tablespoon chopped fresh basil leaf

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.
  • In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.
  • Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients prepped and measured out. This will help you stay organized and avoid scrambling later on.
  • Don't overcrowd the pan: When cooking the shrimp and asparagus, be sure to not overcrowd the pan. This will prevent the ingredients from cooking evenly and will make them more likely to stick to the pan.
  • Cook the shrimp and asparagus until they are just cooked through: Overcooking the shrimp and asparagus will make them tough and rubbery. So, be sure to keep an eye on them and remove them from the heat as soon as they are cooked through.
  • Make sure the red pepper cream sauce is hot when you add the shrimp and asparagus: This will help to prevent the shrimp and asparagus from cooling down the sauce and making it too thick.
  • Serve the pasta immediately: This dish is best served immediately, while the pasta is still hot and the sauce is still creamy.

Conclusion:

This low-calorie shrimp asparagus penne with red pepper cream sauce is a delicious and easy-to-make dish that is perfect for a quick and healthy weeknight meal. The combination of shrimp, asparagus, and red pepper cream sauce is flavorful and satisfying, and the whole dish comes together in just 30 minutes. So, next time you're looking for a healthy and delicious pasta dish, give this recipe a try!
