A deliciously low-fat French toast recipe. For a change of taste, top fruit and cream cheese-filled French toast with a drizzle of maple syrup in place of the honey or preserves.

Categories     Breakfast

Time 30m

Yield 8 serving(s)

Number Of Ingredients 10

1/2 cup fat free cream cheese (about 5 oz.)
2 tablespoons fruit preserves, whatever flavor you prefer
8 slices French bread, 1-inch thick
2 slightly beaten egg whites
1 beaten egg
3/4 cup nonfat milk
1/2 teaspoon vanilla
1/8 teaspoon apple pie spice
1/2 cup honey or 1/2 cup fruit preserves, of your choice
sifted powdered sugar (optional)

Steps:

  • In a small bowl stir together cream cheese and the 2 tablespoons of preserves. Using a serrated knife, cut a pocket in each bread slice by making a cut in the crust top of each slice from the top almost to the bottom. Fill each pocket with some of the cream cheese mixture.
  • In a shallow bowl beat together the egg whites, whole egg, milk, vanilla, and apple pie spice. Coat an unheated nonstick griddle or large skillet with cooking spray. Preheat over medium heat.
  • Dip bread slices into egg mixture, coating both sides. Cook bread slices on hot griddle about 3 minutes or until golden brown, turning once to cook second sides.
  • Meanwhile, in a small saucepan heat the 1/2 cup fruit preserves of your choice (if using) until melted, stirring frequently. If desired, sift with powdered sugar. Serve melted preserves or honey with French toast.

LOW CAL FRENCH TOAST

Low Cal French Toast image

This is a very old WW recipe that I have tweaked a bit. When you have a craving for French toast and want to keep the calories down, this is a good option.

Time 5m

Yield 1 serving(s)

Number Of Ingredients 5

1 slice bread (any day-old)
1 egg, well beaten
cinnamon
artificial sweetener
Pam cooking spray

Steps:

  • Cut a piece of tin foil large enough to accommodate the bread and spray with Pam.
  • In a bowl, soak bread in the well beaten egg, turning the bread at least once.
  • Place bread on tin foil and broil.
  • You can flip it over, careful not to burn yourself, but it is not necessary. Watch closely, so it doesn't burn. It is done when it is moderately browned, 2-4 minutes.
  • Sprinkle top with cinnamon and/or mixture of cinnamon and artificial sweetener (one envelope is more than enough).
  • Suggestion: You can place multiple slices on a larger piece of foil that you have placed on a cookie sheet or broiler pan, for ease of removing. But each slice is one serving.

Tips:

  • Use low-calorie bread, such as whole-wheat or multigrain bread, to reduce the overall calorie content of the French toast.
  • Use a non-stick skillet to cook the French toast to reduce the amount of oil or butter needed.
  • Use a variety of fruits and vegetables for the stuffing, such as berries, apples, bananas, spinach, or mushrooms, to add flavor and nutrients.
  • Use a low-fat or non-fat cheese, such as cottage cheese or ricotta cheese, to reduce the fat content of the stuffing.
  • Use a sugar-free or low-sugar syrup to top the French toast, or sprinkle with cinnamon or nutmeg for a healthier alternative.
  • Serve the French toast with a side of fruit or yogurt for a complete and balanced meal.

Conclusion:

Low-calorie stuffed French toast is a delicious and satisfying breakfast or brunch option that is also relatively healthy. By using low-calorie bread, a non-stick skillet, and a variety of healthy ingredients for the stuffing, you can create a dish that is lower in calories and fat than traditional French toast. This recipe is also a great way to use up leftover bread and fruit.
