Time 1h5m

Yield 6

Number Of Ingredients 10

6 ears corn, husked and cleaned
2 tablespoons vegetable oil
1 large onion, thinly sliced
1 cup green bell pepper, chopped
1 large fresh tomato, chopped
¼ cup milk
salt to taste
cayenne pepper
¼ cup chopped green onions
8 strips crisply cooked bacon, crumbled

Steps:

  • Cut corn off the cobs by thinly slicing across the tops of the kernels; place in a medium bowl. Cut across the kernels again to release milk from the corn, add milk to bowl. Set aside.
  • Heat the oil in a large skillet over medium-high heat. Add onion and green pepper, cook until onion is transparent, about 5 to 8 minutes. Combine corn, tomatoes, and milk with the onion mixture. Reduce heat to medium low, and cook 20 minutes longer, stirring frequently to prevent sticking. Do not boil. Season with salt and cayenne pepper. Lower heat, cover skillet, and cook 5 to 10 minutes longer. Stir in green onions and bacon. Remove from heat and serve.

Tips:

  • Fresh Ingredients: Use fresh corn and other vegetables for the best flavor. Fresh corn is available during the summer months, but you can also use frozen corn in the off-season.
  • Cook the Corn Properly: Make sure to cook the corn until it is tender but still retains a slight crunch. Overcooked corn will be mushy and bland.
  • Use a Good Stock: A flavorful stock will add depth to the maque choux. You can use chicken stock, vegetable stock, or even seafood stock.
  • Don't Skimp on the Seasonings: Maque choux is a flavorful dish, so don't be afraid to use plenty of seasonings. Creole seasoning, garlic, onion, and cayenne pepper are all essential ingredients.
  • Adjust the Heat Level: Maque choux can be made as mild or spicy as you like. If you like things spicy, add more cayenne pepper or hot sauce. If you prefer a milder dish, reduce the amount of cayenne pepper or omit it altogether.

Conclusion:

Maque choux is a delicious and versatile dish that is perfect for any occasion. It can be served as a side dish, a main course, or even as a dip. It is also a great way to use up leftover corn. No matter how you serve it, maque choux is sure to be a hit!
