**Lomo Saltado:** A Peruvian Stir-Fry Delight

Lomo saltado is a classic Peruvian stir-fry dish that combines tender strips of beef, flavorful vegetables, and a rich, savory sauce. This dish offers a vibrant blend of textures and flavors. The beef is marinated in a mixture of soy sauce, vinegar, garlic, and spices, giving it a savory and slightly tangy taste. The vegetables, typically bell peppers, onions, and tomatoes, are cooked to perfection, retaining their crispness and vibrant colors. The sauce, made with soy sauce, vinegar, and beef broth, adds a delightful umami flavor to the dish. Lomo saltado is typically served with rice and is a beloved dish in Peru and beyond.

**In this article, we present two exciting variations of lomo saltado:**

1. **Traditional Lomo Saltado:** This recipe stays true to the authentic Peruvian version, using beef as the main protein. The beef is marinated in a flavorful mixture of soy sauce, vinegar, garlic, and spices, then stir-fried with bell peppers, onions, and tomatoes. The dish is finished with a rich and savory sauce made with soy sauce, vinegar, and beef broth.

2. **Vegan Lomo Saltado:** For those who prefer a plant-based diet, this recipe offers a delicious vegan alternative to lomo saltado. Instead of beef, the dish uses marinated tofu or seitan as the protein source, providing a satisfying and protein-packed option. The vegetables and sauce remain the same as in the traditional version, ensuring a vibrant and flavorful stir-fry experience.

Both variations of lomo saltado are easy to make and can be enjoyed as a main course, accompanied by rice or your favorite sides. Whether you prefer the classic beef version or the plant-based vegan option, this Peruvian stir-fry dish is sure to tantalize your taste buds.

Martin Morales' recipe for this traditional Peruvian dish, adapted from his book Ceviche, combines soy sauce, chilli and Pisco

Provided by Martin Morales

Categories     Dinner, Main course

Time 30m

Number Of Ingredients 15

300g fillet steak , cut into large cubes
1 tbsp vegetable oil , for frying
½ large red onion , cut into thick wedges
1 tomato , halved, deseeded and cut lengthways into eighths
1 amarillo chilli or medium red chilli , deseeded and sliced lengthways
1 tbsp Pisco (grape brandy) or vodka
2 tbsp ají amarillo chilli paste or Basic chilli paste (see tips)
small handful coriander leaves, finely chopped
chunky chips , to serve (optional)
2 garlic cloves , chopped
75ml soy sauce
1 tbsp red wine vinegar
1 tsp Worcestershire sauce
½ tsp dried oregano
½ tsp ground cumin

Steps:

  • Make the marinade by mixing all the ingredients together in a large bowl. Add the meat to the bowl and mix so that it is well covered. Cover with cling film and leave in the fridge for at least 2 hrs, overnight if you have time.
  • Drain the meat, reserving the marinade. Heat the oil in a wok over a high heat until just smoking, then add the meat - be careful, the oil might splutter. Cook as quickly as possible, tossing it until the meat is browned on all sides. Add the red onion and cook for 1 min. Add the tomato and chilli, then immediately spoon in the Pisco. Pour over the reserved marinade and chilli paste, stir well, turn off the heat and leave the meat to rest in the sauce for a couple of mins. Garnish with coriander and serve with chunky chips, if you like.

LOMO SALTADO ( VEGAN )

Lomo Saltado ( Vegan ) image

Lomo Saltado is a Peruvian dish with Chinese influences. This dish is normally prepared with beef tenderloin, potatoes, and vegetables and served with rice - but this version ditches the beef!! The recipe calls for wheat gluten strips but you could also use SEITAN, TOFU, or PORTABELLA MUSHROOMS. Look for jarred aji yellow paste or aji amarillo paste in a Latin food market. If you can't find the paste, you can use frozen aji amarillo peppers (South American hot yellow chile pepper) or equivilant pepper. Thaw and dice one pepper, and saute it in olive oil until it's soft. This recipe is from Vegan International.

VEGETARIAN LOMO SALTADO

Vegetarian Lomo Saltado image

Love love love this recipe from Peru. It's part Latin flavors part Chinese flavors. If you can't find ajis amarillos chili peppers, try substituting ancho or even just green bell, if you like things mild.
