Lobster and brie enchiladas are a gourmet take on the classic Mexican dish. These enchiladas feature succulent lobster meat, melted brie cheese, and a velvety lobster sauce, all wrapped in tender tortillas. The recipe starts with preparing the lobster filling, which involves sautéing lobster meat with aromatic vegetables and herbs. The filling is then combined with brie cheese, creating a rich and flavorful combination. The enchiladas are assembled by filling tortillas with the lobster-brie mixture and rolling them up. They are then baked in a casserole dish until golden brown and bubbly. The enchiladas are served with a decadent lobster sauce and garnished with fresh herbs. This recipe also includes a vegetarian variation using roasted butternut squash instead of lobster, making it a versatile dish that can cater to dietary preferences. Additionally, there's a step-by-step video guide to assist visual learners in creating this delectable dish.

These crab and shrimp stuffed enchiladas taste like the ones served at a popular Mexican restaurant in my area. My husband just loves them. After sprinkling the cheese over the enchiladas before baking, you can also garnish with tomatoes, cilantro, olive slices, or whatever other garnish you enjoy.

LOBSTER-TOASTED GARLIC QUESADILLAS WITH BRIE CHEESE
Steps:
- Preheat grill to high. Brush the cut side of the lobster with oil and season with salt and pepper. Place the lobster on the grill, shell side down, and grill until lightly golden brown and just cooked through. Remove the meat from the lobster and coarsely chop.
- Heat a tablespoon of oil in a small saute pan on the grates of the grill. Add the garlic and cook until lightly toasted. Place 4 tortillas on a work surface and divide the half of the cheese, lobster, and garlic among the tortillas. Season with salt and pepper, to taste.
- Place another tortilla on top and then divide the remaining cheese, lobster, and garlic over top. Place the remaining tortillas on top to make 2-layer quesadillas. Brush tops of the tortillas with oil and then place the quesadillas on the grill, oiled side down. Grill until golden brown, about 2 to 3 minutes. Carefully flip the quesadillas over, close the cover of the grill, and grill until the cheese has melted, about 2 to 3 minutes longer. Remove from the grill, cut each quesadilla into quarters, and serve with the various toppings.
- Combine all ingredients in a medium bowl. Season with salt and pepper, to taste.
- Place ancho chiles in a medium bowl, cover with boiling water, and let sit at room temperature for 1 hour. Remove from soaking liquid, coarsely chop, and place in a blender with the garlic, 1/4 to 1/2 cup of the soaking liquid, 2 to 3 tablespoons canola oil, and the pine nuts; blend until smooth. Pour the mixture into a medium bowl.

Steps:
- For the pico de gallo: Mix jalapenos, tomatoes and onions in a bowl. Stir in lime juice and cilantro. Chill for 30 minutes.
- For the roasted poblano sauce: Roast poblanos on a char-broiler until skin is black on all sides. Transfer to a pan and cover with plastic wrap for 15 minutes to further sweat the poblanos. Under running water, peel and clean poblanos and remove all seeds and stems.
- Saute onion in 2 ounces butter until it starts to caramelize, about 3 minutes. Add garlic and cook for 2 to 3 more minutes. Add a cup of chicken stock to cool. Remove mixture to a blender and puree, then transfer to a saucepot. Add poblanos to blender in batches and puree, adding more chicken stock as needed to loosen, then combine with ingredients in the pot. Add cilantro, cumin, taco seasoning, salt and pepper to pot and bring to boil. Simmer for 10 to 15 minutes. Make a roux by adding flour to remaining 1/2 cup butter in a saute pan and cooking slowly to a golden hue, about 10 minutes. Thicken sauce to desired thickness by adding roux to pot.
- For the enchiladas: Preheat oven to 420 degrees F.
- Cut lobster into medium bite-sized pieces and par-cook in white wine in a pan 1 to 2 minutes. Drain and divide into 3 portions. LOBSTER AND STONE CRAB ENCHILADO
Steps:
- Place thawed lobster and fresh lime juice in medium bowl; toss to coat. Let stand 15 minutes, tossing lobster occasionally.
- Heat olive oil in heavy large pot over high heat. Add lobster pieces and any accumulated juices. Sauté until lobster shells turn bright orange, about 4 minutes. Using slotted spoon, return lobster to same bowl. Reduce heat to medium. Add chopped onion and chopped bell pepper to pot; sauté until soft, about 5 minutes. Add chopped garlic cloves, fresh parsley, and paprika and sauté 1 minute. Add diced tomatoes and tomato purée. Cook until juices thicken, stirring frequently, about 8 minutes. Add clam juice, dry Sherry, and bay leaf. Season to taste with salt. Add cayenne pepper. Bring mixture to boil, then add stone crab claws and reserved lobster with any accumulated juices. Reduce heat to medium-low, cover, and simmer until lobster meat is cooked through and tender, about 10 minutes.
Tips:
- For the best flavor, use fresh lobster meat. If you don't have access to fresh lobster, frozen lobster meat will also work.
- Be sure to cook the lobster meat until it is just cooked through. Overcooked lobster will be tough and chewy.
- To make the enchiladas easier to roll, warm the tortillas in the microwave for a few seconds before filling them.
- If you don't have enchilada sauce, you can use your favorite tomato sauce instead.
- Top the enchiladas with plenty of cheese before baking. This will help to keep them moist and flavorful.
- Serve the enchiladas with your favorite toppings, such as sour cream, guacamole, and salsa.
