2 porterhouse steaks (about 2 pounds each)
Kosher salt and freshly ground black pepper
2 tablespoons butter
2 tablespoons olive oil
2 leeks, dark green parts discarded, white and light green parts halved lengthwise and soaked in cold water to remove grit, diced
2 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream
6 tablespoons canola oil

Steps:

  • Generously sprinkle the steaks with salt and fresh ground black pepper 1 hour before cooking and hold in the refrigerator.
  • Heat the butter and olive oil in a large saute pan over medium heat. Add the leeks and saute until soft, 3 minutes. Add the garlic and saute for another 2 minutes. 1 teaspoon dried oregano
8 cloves garlic, smashed
Six 2-inch-thick porterhouse steaks (2 pounds each)
Herb Butter, recipe follows
2 sticks (8 ounces) salted butter, at room temperature
1/4 cup sliced chives
1/4 cup finely chopped fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
