Time 45m

Number Of Ingredients 11

1/2 pound bacon, uncooked
1/2 cup onion, diced (one small onion)
3 cloves garlic, minced
1 1/4 cup mashed potatoes (leftovers work great!)
1 cup sharp cheddar cheese
3/4 cup all-purpose flour
1 egg
1/4 teaspoon mustard
1/8 teaspoon black pepper
Sour Cream (optional)
Green Onions (optional)

Steps:

  • Cook bacon in a large skilled over medium heat turning as needed to cook evenly on both sides. Remove from pan and let cool on paper towels. Once cooled, crumble bacon and set aside. Leave 1/2 the bacon grease in pan and set other 1/2 aside for use later. Add diced onions to bacon grease.and cook until soft and translucent. Add garlic and cook for 1 minute. Once cooked scoop out onions and garlic into a medium sized bowl. Set skillet aside for use again later. Add mashed potatoes, cheese, flour, egg, mustard and black pepper to onions. Mix well. Place skillet back on medium heat and add 1/2 remaining bacon grease. Scoop out a golf ball sized hunk of dough and smash between hands to form a pancake, around 1/4 inch thick. Place pancakes into grease and fry until golden on each side, approximately 5 minutes on each side (depending on how hot your stove is). Add remaining bacon grease as needed. If you run out, use butter. Serve hot or room temperature with sour cream, green onions and remaining bacon crumbles!

Tips:

  • For the best results, use freshly mashed potatoes. Leftover mashed potatoes can be used, but they may not be as fluffy.
  • Be sure to season the mashed potatoes well. This will help to flavor the potato cakes.
  • Don't overwork the potato mixture. Overworking will make the potato cakes tough.
  • If the potato mixture is too wet, add more bread crumbs until it is firm enough to form into cakes.
  • Be careful not to overcrowd the pan when frying the potato cakes. This will prevent them from cooking evenly.
  • Serve the potato cakes hot with your favorite toppings.
