- In a large bowl, combine the mashed potatoes, egg, cheese and bacon. Shape mixture into 8 patties. Roll in bread crumbs.
- Place on broiler pan. Broil for 10 minutes or until delicately browned.

- Cook bacon in a large skilled over medium heat turning as needed to cook evenly on both sides. Remove from pan and let cool on paper towels. Once cooled, crumble bacon and set aside. Leave 1/2 the bacon grease in pan and set other 1/2 aside for use later. Add diced onions to bacon grease.and cook until soft and translucent. Add garlic and cook for 1 minute. Once cooked scoop out onions and garlic into a medium sized bowl. Set skillet aside for use again later. Add mashed potatoes, cheese, flour, egg, mustard and black pepper to onions. Mix well. Place skillet back on medium heat and add 1/2 remaining bacon grease. Scoop out a golf ball sized hunk of dough and smash between hands to form a pancake, around 1/4 inch thick. Place pancakes into grease and fry until golden on each side, approximately 5 minutes on each side (depending on how hot your stove is). Add remaining bacon grease as needed. If you run out, use butter. Serve hot or room temperature with sour cream, green onions and remaining bacon crumbles!
