12 strips bacon
1 pound broccoli florets
¾ cup diced red bell pepper
½ cup water
1 cup sour cream
1 teaspoon salt

Olive oil
Kosher salt and freshly ground black pepper
12 to 14 medium red bliss potatoes, scrubbed and dried
8 large cloves garlic, halved
1 large red bell pepper, large dice
1/4 teaspoon crushed red pepper flakes
1/2 cup finely grated Parmesan
1 tablespoon red wine vinegar
1 1/2 cups shredded Cheddar

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the onions, potatoes and garlic: In a large bowl, toss the onions in 2 tablespoons oil, season generously with salt and pepper and spread on one side of a sheet pan. In the same bowl, toss the potatoes in 1 tablespoon oil, season generously with salt and pepper and spread on the other side of the sheet pan. Toss the garlic in the same bowl with a little oil, season with salt and pepper and add to the sheet pan.
