1/4 lb thinly sliced corned beef
1/2 cup finely shredded Swiss cheese (2 oz)
1/3 cup sauerkraut, well drained
1/2 cup Thousand Island dressing
1 tablespoon milk

Steps:

  • Heat oven to 375°F.
  • If using crescent rolls: Unroll dough into 2 long rectangles. Press each to form 12-inch-long rectangle; press perforations to seal. If using dough sheet: Unroll dough; cut into 2 long rectangles. Press each to form 12-inch-long rectangle.
  • Layer half of corned beef on each dough rectangle, cutting to fit if necessary. Top each with cheese and sauerkraut. Starting at long side, roll up each tightly; seal long edges. Place, seam side down, on ungreased cookie sheet; tuck edges under.
  • Bake 12 to 14 minutes or until golden brown.
  • Meanwhile, in small bowl, mix dipping sauce ingredients.

1 loaf rye cocktail bread
1 (16 ounce) can sauerkraut
1/2 lb corned beef, sliced very thin and quartered
1/2 lb swiss cheese, sliced and quartered
thousand island dressing

Steps:

  • Drain sauerkraut.
  • Place coctail ryes on cookie sheet in single layer.
  • Carefully place corn beef on each slice of rye.
  • Add 1 tablespoon saurerkraut on top of corn beef.
  • Squeeze a dash of thousand island dressing on top of saurkraut.
  • Top with swiss cheese.
  • Preheat oven to 350 degrees.
  • Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.

These are so nice to serve for St. Patrick's Day. They are simple to make and everyone seems to love them. A friend gave me this recipe last year and I make them whenever I need to take an appetizer to a dinner.

1 pkg appetizer size deli rye bread
1 c prepared thousand island salad dressing
1/2 lb deli style corned beef, sliced thin
1 pkg sauerkraut, from deli or canned, well drained
1/2 lb thinly sliced swiss cheese

  • 1. Preheat oven to 350 degrees. Separate bread slices and spread out on an ungreased cookie sheet.
  • 2. Prepare each bread slice by first spreading with Thousand Island dressing, next place a slice or two of corned beef on top of bread, top with a tablespoon of sauerkraut, finally place a square of Swiss cheese on top of everything.

1 small loaf deli cocktail rye bread or pumpernickel bread
1 bottle thousand island dressing
3/4 lb corned beef or pastrami,sliced very thin
1 can(s) sauerkraut, drained
3/4 lb swiss cheese, sliced thin

  • 1. Preheat oven to 350º.
  • 2. Place all bread slices on an ungreased cookie sheet.

Pretzel crackers, if desired
Cocktail rye bread slices, if desired
Chopped fresh chives, if desired
Sliced radishes, if desired

  • Heat oven to 400°F.

20 slice party cocktail rye bread,flatened
1/2 c thousand island salad dressing( more or less)
2 pkg 2 oz. each budding original corned beef slices
1/2 c sauerkraut, drained,pat dry
12 slice swiss cheese,divided

Steps:

  • 1. Heat oven to 350^. With a rolling pin-flatten each slice of the bread and place on a cookie sheet. Bake in hot oven for 6 minutes then turn over each slice and bake for 6 more minutes. Remove from oven to cool.(leave oven on)
  • 2. Spread slices with thousand island dressing.
  • 3. Top each with a thin slice of corned beef(I used Budding original corned beef-two 2 oz. pkgs.) Fold each piece of meat in half then in half again.
  • 4. Cover each with sauerkraut(about 1 Tablespoon each)
  • 5. Cut the cheese slice to fit the bread and cover the sauerkraut..You can cut an exact size piece- then use pieces to patch remaining slices.
  • 6. Bake in oven for 4 to 5 minutes until cheese is melted. Enjoy!
