1 small onion (diced)
3 stalks celery (diced)
2 garlic cloves (minced)
1 can chicken broth (14.5 ounce)
1 can cream of celery soup*
1 cup uncooked rice
1/4 cup slivered almonds

Steps:

  • Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.

1 onion, finely chopped
1 cup chopped celery
1 green bell pepper, chopped
½ cup uncooked long-grain rice
2 ½ cups hot water
1 envelope chicken noodle mix -dry
2 tablespoons sliced almonds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a Dutch-oven over medium heat, brown the sausage with the onion, celery and bell pepper; drain. Pour in rice, hot water, and soup mix. Stir until any lumps of soup have melted. Top with almonds. Cover and bake in a preheated oven for 1 1/2 hours.

I found this version in a local farmers market cookbook. I made a few changes but the basic recipe is still the same. Most other versions call for dried chicken noodle soup mix which is hard to find here. Recipe calls for hot sausage but you can use the mild.

1 lb bulk hot pork sausage
1 cup uncooked long-grain rice
1 medium onion, chopped
1/2 cup chopped celery
1/2 cup chopped green pepper
1 (8 ounce) can sliced water chestnuts, drained
1 (14 1/2 ounce) can chicken broth
1/4 cup water
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees. Cook sausage until brown .Drain grease well.
  • Lightly grease a 3-qt. casserole dish. Spread rice evenly in pan. Sprinkle onions, celery, green peppers and water chestnuts over rice. Sprinkle salt and pepper over vegetables. Pour chicken broth and water over vegetables. Spoon sausage on top. Cover and bake at 350 degrees for 30 minutes. Remove from oven and stir well. Cover and bake an additional 30 minutes.

1 roll of sausage of your choice (Jimmy Dean for me)
4 oz cream cheese
1 cup chopped sweet peppers
2 TBSP butter
1/2 cup pico de gallo
1 package King's Hawaiian Rolls, savory not sweet
6 eggs
1 cup heavy whipping cream
2 cups shredded Mexican cheese

Steps:

  • Brown the sausage and drain. Add the sausage back to the skillet and add the cream cheese. Stir until it melts. Set aside. Saute' the chopped peppers in the butter. Add the pico and stir well. Drain. Add the pepper mixture to the sausage mixture and stir well. Add 1 cup of the shredded cheese and combine. Tear the rolls into large hunks and place in a large bowl. Whisk the eggs with the heavy cream and pour over the rolls. Add the sausage mixture to the roll mixture and stir. Stir in 1 cup of the shredded cheese. Pour into 13 x 9 baking dish and add the remaining cup of cheese. Cover with foil and bake 45 minutes at 350 degrees.

1 cup celery, chopped

1 (10 1/2 ounce) can cream of chicken soup

Steps:

  • Preheat oven at 350°.
  • Brown sausage in frying pan and pour off grease.
