Unsalted butter, for the pans
3 1/2 cups all-purpose flour, plus more for the pan (see Cook's Note)
3 cups sugar
1 cup vegetable oil
4 large eggs, lightly beaten
One 15-ounce can pure pumpkin puree
2 teaspoons fine salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2/3 cup water

Steps:

  • Preheat oven to 350 degrees F. Butter and flour two 9-by-5-inch loaf pans.
  • Whisk together the sugar and oil in a large bowl until well combined. Whisk in the eggs and pumpkin until combined.

You can also add walnuts (black or English) or pecans, golden raisins to the mix if you like, also I make honey butter to go with this bread, 1 stick of butter...

2 c sugar
4 eggs beaten
1 c vegetable oil
1/2 c water
1 can(s) 160z can of pumpkin (not pumpkin pie filling)
31/2 c ap flour
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp cloves
2 tsp baking soda
1 tsp salt
1 tsp freshly grated nutmeg
1/2 tsp allspice, ground

Steps:

  • 1. sift all dry ingredients, flour, spices, salt, baking powder, baking soda together and sit aside.
  • 2. Beat, sugar, oil, water eggs and pumpkin together till mixed well.
  • 3. Starting adding flour mixture together a little at a time till blended well.
  • 4. Grease 2 loaf pans 9x5 and divide the batter between the two and bake at 350 60-70 minutes. Cool about 5-10 minutes in pan, then dump out onto a wire rack to cool.
