Linnie's Fiesta Burgers image

This is one of my husband's favorite dishes and I've been making this for about 45 years. I usually use a creamy chees like Velveeta but a white Mexican cheese would be good, too. It makes for a great sauce! If you don't like green peppers you can also use a can of mild green chilies. I usually serve this with Mexican or...

Time 40m

Number Of Ingredients 11

1 1/2 lb fresh ground beef
2 eggs beaten
1/2 finely chopped onion
1 pkg crushed ritz crackers
1/4 c each of ketchup & brown sugar
2 tsp worcestershire sauce
1/2 c diced greep pepper
1 c shredded cheese
2 can(s) cream of mushroom soup
can(s) pinto beans or kidney beans
1/4 tsp salt and pepper

Steps:

  • 1. Prepare the hamburger patties by mixing together the eggs, crushed crackers, ketchup, Worcestershire sauce, onions, brown sugar, salt and pepper. Make six patties. Brown the meat in a skillet over medium heat and check the bottoms often because they can burn easily since they contain brown sugar and ketchup.
  • 2. After they are browned on both sides, pour the mushroom soup over the burgers. Make sure the soup gets underneath the patties. Then sprinkle the pinto beans and green pepper over the top. Cover with a lid and let them simmer for about ten minutes over low heat.
  • 3. Sprinkle grated cheese over the top, cover it again and let it cook over low heat another five minutes until the cheese is melted. Then serve it up!

HEARTY FIESTA BURGERS

Hearty Fiesta Burgers image

When growing up my Mother was always trying new things and was a good cook in general. Mom is a Chef today and still a wonderful cook. This is one of many good things she made when I was a kid. Who knows where she got the recipie but I always liked it and so do my children. I like spicy stuff so sometimes I will substitute jalapeno for the green pepper.

Time 55m

Yield 6 patties, 6 serving(s)

Number Of Ingredients 12

3/4 cup saltine crackers (crushed, 21 crackers)
2 eggs
1/4 cup onion (chopped)
1/4 cup catsup
2 tablespoons Worcestershire sauce
1/4 teaspoon salt
1 dash pepper
1 lb ground beef
1 (10 1/2 ounce) can cream of mushroom soup
1 (15 ounce) can kidney beans (drained)
1/3 cup green pepper (chopped)
2 ounces cheddar cheese (shredded)

Steps:

  • Combine crumbs, eggs, onion, catsup, worchesstershire, salt and pepper.
  • Add ground beef and mix well by hand.
  • Shape meat into 6 patties.
  • In large skillet brown patties on both sides.
  • Pour soup over meat, top with beans and green pepper.
  • Cook covered over low heat 10 minutes.
  • Sprinkle cheese over top and cook covered 5 more minutes.

Tips:

  • To make sure the burgers are cooked evenly, use a meat thermometer to check that the internal temperature has reached 160°F (71°C).
  • Don't overcook the burgers, or they will become dry. Cook them for about 4 minutes per side for medium-rare burgers.
  • If you don't have a meat thermometer, you can tell if the burgers are cooked by pressing down on them with a spatula. If the burgers spring back, they are cooked.
  • For a more flavorful burger, use a blend of ground beef and ground pork.
  • Add your favorite toppings to the burgers, such as cheese, lettuce, tomato, onion, and pickles.
  • Serve the burgers on a bun with your favorite sides, such as fries, onion rings, or a salad.
