LINGUINE WITH SHRIMP AND CLAM SAUCE
My husband's favorite seafood dish. The sauce is thin and rich, but not creamy nor red. I use a can of diced clams, though the recipe originally calls for 2 dozen cherrystone or littleneck clams, shucked, reserving the liquid. It's up to you on which one you'd like to use.

Steps:
- In large skillet, melt 1/4 cup butter; cook onion and garlic until tender.
- Add half of the parsley (or basil) and shrimp, cook for 1 minutes.
- Add tomatoes, wine, salt and pepper; bring to boil. Cook just until shrimp turn opaque and begin to curl.
- Remove from heat and reheat just before pasta is ready.
- Place cooked pasta over butter in warm serving dish; pour sauce over and toss until pasta is well coated and most of liquid has been absorbed.
- Garnish with fresh parsley.
Tips:
- Use fresh ingredients: Fresh seafood, vegetables, and herbs will give your linguine with shrimp and garlic cream sauce the best flavor.
- Cook the shrimp properly: Shrimp should be cooked quickly over high heat so that it remains tender and juicy. Overcooked shrimp will be tough and rubbery.
- Make sure the sauce is thick enough: The sauce should be thick enough to coat the linguine and shrimp without being too heavy. If the sauce is too thin, add a little more flour or cornstarch. If the sauce is too thick, add a little more milk or cream.
- Season the dish to taste: Be sure to taste the dish before serving and adjust the seasonings as needed. You may want to add more salt, pepper, garlic, or herbs.
- Garnish the dish before serving: A sprinkling of fresh herbs, grated Parmesan cheese, or a drizzle of olive oil will add a finishing touch to your linguine with shrimp and garlic cream sauce.
Conclusion:
Linguine with shrimp and garlic cream sauce is a delicious and easy-to-make seafood dish that is perfect for a weeknight meal or a special occasion.
