Time 1h20m

Yield 4

Number Of Ingredients 5

3 tablespoons butter
2 ripe pears - peeled, cored, and cubed
3 sprigs fresh thyme
7 ounces Gorgonzola cheese, crumbled
1 pound fresh pasta dough

Steps:

  • Melt butter in a large skillet over medium heat. Add pears and thyme; cook, stirring often, until pears have softened, about 10 minutes. Crumble Gorgonzola cheese over pears; cook and stir until melted, 2 to 3 minutes. Remove skillet from heat and cool filling completely.
  • Cut pasta dough into 3 equal pieces. Flatten the first piece of dough on a floured work surface; roll with a rolling pin 5 or 6 times. Turn the dough 45 degrees and roll again, 5 to 6 times. Keep rolling and turning in the same direction until dough has a consistent thickness of about 1/16-inch. Repeat with remaining 2 pieces of pasta dough.
  • Gently transfer 1 pasta sheet to a floured surface and cut in half to form 2 evenly sized rectangles. Drop about 1 teaspoon filling onto 1 rectangle, spacing the filling about 1-inch apart. Brush the spaces around the filling with water.
  • Lay the second rectangle on top of the first. Gently squeeze out the air around the filling and press firmly with your hands to seal the edges and all dough around the filling.
  • Cut square ravioli shapes using a ravioli cutter. Transfer the ravioli to a floured plate or board. Repeat with the remaining dough and filling. Let the ravioli stand for about 30 minutes.
  • Bring a saucepan of lightly salted water to the boil; gently add ravioli, working in batches. Cook until ravioli float to the top, about 3 minutes. Remove using a slotted spoon and transfer to a warm bowl.

PEAR & GORGONZOLA CROSTINI

Pear & gorgonzola crostini image

Pear & gorgonzola crostini, perfect vegetarian buffet finger-food

Provided by Merrilees Parker

Categories     Buffet, Canapes, Side dish

Time 1h

Number Of Ingredients 8

2 small firm pears , unpeeled
2 tbsp clear honey
150ml port
150ml red wine
1 French bâton or baguette (30cm/12in long)
2 tbsp extra-virgin olive oil
200g gorgonzola , at room temperature
mustard and cress, to garnish

Steps:

  • Halve and core the pears, then cut each one into 12 small wedges. Place in a heavy-based saucepan with the honey, port and wine. Cook for 5-10 minutes or until the pears are just tender when pierced with the tip of a sharp knife (they shouldn't be soft).
  • Carefully tip the pears into a sieve set over a small saucepan and allow them to drain thoroughly.
  • Reduce the liquid in the saucepan by two-thirds - it should have a syrupy consistency like runny honey. This will take 10-12 minutes. Pour the syrup into a small bowl and allow to cool while you prepare the bruschettas.
  • Preheat the grill to hot. Cut the bread into 24 slices and brush both sides of each slice with olive oil. Grill until the bruschettas are golden on both sides. This only takes a minute, so keep watch.
  • Spread each bruschetta with a little gorgonzola and top with a poached pear wedge. Arrange the bruschettas on a serving plate and drizzle with the port syrup using a teaspoon. Sprinkle over a little mustard and cress.
  • Prepare ahead: you can poach the pears the day before and serve them cold - they're just as nice. Take them out of the syrup and reduce, then store the pears and syrup in separate plastic containers in the fridge. If the syrup is too thick the next day, add a little warm water, and if it is too thin, you can reduce it by simmering for a minute or two.

LINGUINE WITH PEPPERS AND SAUSAGE

Linguine with Peppers and Sausage image

This is a very quick and delicious dish. Serve with additional cheese if you desire.

Provided by Jackie

Categories     Meat and Poultry Recipes     Pork     Sausage

Time 35m

Yield 4

Number Of Ingredients 7

1 (8 ounce) package linguini pasta
½ pound sweet Italian sausage, casings removed
2 red bell peppers, chopped
1 onion, chopped
1 clove garlic, minced
1 cup white wine
¼ cup grated Parmesan cheese

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • While the pasta is cooking, prepare the sauce. Saute sausages in a heavy skillet over medium high heat until light brown, breaking up clumps with back of spoon. Add peppers, onion, and garlic; saute until tender. Add wine and simmer until liquid is slightly reduced, about 6 minutes.
  • Drain pasta, and add to the skillet. Toss to combine. Add cheese, and toss to blend. Serve.

Tips:

  • Choose ripe, flavorful pears: The sweetness of the pears will balance the saltiness of the Gorgonzola cheese. Look for pears that are slightly soft to the touch and have a sweet aroma.
  • Use high-quality Gorgonzola cheese: Gorgonzola is a creamy, blue cheese with a sharp, tangy flavor. Look for Gorgonzola that is aged for at least 6 months for the best flavor.
  • Cook the linguine al dente: Al dente means "to the tooth" in Italian, and it refers to the desired texture of cooked pasta. Linguine should be cooked until it is tender but still has a slight bite to it.
  • Sauté the pears and onions gently: You don't want to overcook the pears and onions, as they should still retain their shape and texture. Cook them over medium heat until the pears are tender and the onions are translucent.
  • Use a good quality white wine: The white wine will help to deglaze the pan and add flavor to the sauce. Choose a dry white wine, such as Pinot Grigio or Sauvignon Blanc.
  • Simmer the sauce until it is thickened: The sauce should be thick enough to coat the pasta, but not so thick that it is gloppy. Simmer the sauce for at least 15 minutes, or until it has reached the desired consistency.
  • Garnish with fresh herbs: Fresh herbs, such as parsley or chives, will add a pop of color and flavor to the dish. Chop the herbs finely and sprinkle them over the pasta before serving.

Conclusion:

This linguine with pears and Gorgonzola cheese is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet pears, salty Gorgonzola cheese, and creamy sauce is sure to please everyone at the table. Serve it with a side salad and a glass of white wine for a complete meal.
