1 pound cooked ham, cubed

1 cup mayonnaise
½ cup sour cream

5 lbs red potatoes, with skins on
2 cups mayonnaise (more or less depending on how you like it, Do NOT use fat free or low fat)
1 large onion, finely diced
2 stalks celery, finely diced or 1 teaspoon celery seed
3 carrots, finely diced
1 green pepper, finely diced
6 hard-boiled eggs, finely chopped
3 tablespoons fresh finely chopped chives
20 green olives, finely chopped
1/4 cup yellow mustard
2 tablespoons cider vinegar
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon black pepper

Steps:

  • Peel potatoes, and boil until just done, about 20 minutes. (Just until your fork can be inserted all the way through the potato. You don't want them mushy).
  • Drain well and let cool, then dice or slice potatoes. (I like a small dice, about 1/2"x1/2"). The potatoes will cut nicely once chilled and won't fall apart.
  • Mix other ingredients, and add to chilled potatoes. Let set in the fridge for at least 2 hours before serving for flavors to meld.

Kosher salt
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion

Steps:

  • Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.

3 tablespoons milk
1/4 cup prepared mustard
1/2 teaspoon pepper
1/2 teaspoon salt
3 lbs cold potatoes, cooked, peeled, and diced
1 lb cooked ham, i use ham shoulder, cubed
1 (9 ounce) package frozen peas, thawed
1 small onion, chopped fine
1/4 cup thinly sliced red pepper
1/4 cup thinly sliced green pepper
8 lettuce leaves, washed, and dried

  • For the dressing, in a small bowl combine mayonnaise, milk, mustard, salt and pepper.
