LINDA'S HAWAIIAN BARBECUE SAUCE FOR BARBECUE CHICKEN AND RIBS

Linda's Hawaiian Barbecue Sauce for Barbecue Chicken and Ribs image

This sauce is so good I entered it in the BBQ Sauce Cook Off 9/07. Use this sauce on ribs, chicken, pork chops, seafood... Heck, just about anything! It promises to give you the ULTIMATE in flavor. I used this sauce on ribs, and they are absolutely to die for, and the BEST ribs I have ever had the pleasure of making and eating... This recipe is heaven sent, especially for us rib lovers, using 3 racks of baby back ribs! I double the sauce, and use every last bit. Any sauce that may be left over after basting, you can spoon on ribs right before serving. Definately one not to be missed!

Yield Makes 6 hors d'oeuvre servings

Number Of Ingredients 8

3/4 cup sugar
1/2 cup soy sauce
1/2 cup ketchup
1/4 cup medium-dry Sherry
1 teaspoon salt
1 garlic clove, smashed
1 (1-inch) cube peeled fresh ginger, smashed
3 pounds baby back pork ribs (3 racks; do not cut apart)

Steps:

  • Stir together sugar, soy sauce, ketchup, Sherry, and salt in a bowl until sugar is dissolved. Pour marinade into a roasting pan, then add garlic, ginger, and ribs, turning ribs to coat with marinade. Marinate, covered and chilled, turning occasionally, at least 3 hours.
  • Preheat oven to 325°F.
  • Line bottom of a broiler pan with foil, then arrange ribs, rounded sides up, on broiler rack, reserving marinade for basting (discard garlic and ginger). Roast in middle of oven, basting with marinade every 20 minutes (do not baste during last 10 minutes of cooking), until ribs are tender and glaze is well browned, about 1 3/4 hours. Discard any unused marinade.
  • Let racks stand 5 minutes, then cut into individual ribs.

Time 5m

Yield 2 cups

Number Of Ingredients 6

3/4 cup unsweetened pineapple juice
1/2 cup vegetable oil
1/3 cup soy sauce
1/4 cup lemon juice
1/4 cup molasses
1 teaspoon ground ginger

Steps:

  • Mix all ingredients well.
  • Use to baste chicken, pork, or lamb.

Tips:

  • To achieve a thicker sauce, reduce it more. Simmer the sauce gently over low heat for an additional 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.
  • Feel free to adjust the ingredients to your taste preferences. If you prefer a sweeter sauce, add more brown sugar or pineapple juice. If you want a spicier sauce, add more chili powder or cayenne pepper.
  • If you don't have any soy sauce on hand, you can substitute an equal amount of tamari or coconut aminos.
  • This sauce is also great on tofu, fish, or vegetables.

Conclusion:

Linda's Hawaiian Barbecue Sauce is a delicious and versatile sauce that is perfect for any occasion. Whether you're grilling chicken or ribs, or you're looking for a dipping sauce for your favorite appetizers, this sauce is sure to please.
