- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease 2 baking sheets or use parchment paper.
- Stir Monterey Jack cheese, Parmesan cheese, green onion, garlic, seasoned salt, paprika, and red pepper flakes together in a bowl. Fold in drained crabmeat.
- Unfold pastry sheet on a lightly floured surface. Brush with some of the beaten egg white. Top with crab mixture. Roll up like a jelly roll starting at the short side. Cut into 1/2-inch slices. Place slices cut-side down on the prepared baking sheets. Brush with remaining egg white.

- 1. In a medium sized bowl; beat cream cheese until smooth. Fold in the parsley, red pepper, sauce, onion, cheese and crab. Sprinkle with desired chili powder.
- 2. Lay out your tortilla's Spread about 1/4 cup onto each tortilla.
- 3. Roll tightly. I cut the ends with kitchen shears.
- 4. Wrap tightly in plastic wrap and refrigerate for about 2 hours.
- 5. Preheat oven to 350 degree F. Slice each roll into 5 - 6 slices and place on a sprayed baking sheet.
- 6. Bake for 10 - 15 minutes or until bubbly. Sprinkle with paprika and enjoy!

- 1. Combine cream cheese, sour cream, and cocktail sauce. Stir until smooth. Add green onions if you like them. If you are using the shrimp it can be mixed in at this time. Spread the mixture on tortillas. If you are using the crab sticks they will be rolled into the center of each roll up. You will need 1 ½ to 2 per roll up depending on the size of your tortillas. Once you have them rolled up wrap each one in plastic wrap. It is best if they sit an hour before serving. These can be made a couple days in advance. Slice in 1/2 to 1 in. slices. You can serve it with a dot of cocktail sauce on top of each one.
- 2. Alternative Cracker spread: Mix cream cheese and sour cream. Spread on a plate. Spread cocktail sauce on top of that. Sprinkle 1 can of baby shrimp on top. Serve with your favorite crackers.
