1 lb hamburger
1/4 cup onion, chopped
1 (16 ounce) can refried beans (not the large size)
1 tablespoon cinnamon
2 teaspoons chili powder
1 teaspoon black pepper
1/2 cup chili sauce
2 cups monterey jack cheese, shredded
10 large flour tortillas

Steps:

  • Brown hamburger and onion.
  • Add beans, spices and chili sauce. Mix together and heat on low flame while shredding cheese. Place about 1/2 cup on flour tortilla.
  • Top with shredded cheese and roll up.
  • Place seam side down on plate in micro-wave. Heat on "re-heat" for 1 minute until cheese melts.

4 firm tomatoes (slightly under-ripe)
6 tablespoons extra-virgin olive oil
Fleur de sel or coarse kosher salt
Freshly ground black pepper
One 8- to 9-ounce ball burrata
1/4 cup fresh basil leaves
1 teaspoon dried oregano
Zest of 1 lemon
2 tablespoons balsamic glaze
Sliced baguette or other crusty bread, for serving

Steps:

  • Prepare a grill for medium-high heat. It's best to use a grill basket, but if you don't have one, oil the grill grates.
  • Cut the tomatoes in half crosswise and brush with 4 tablespoons of the olive oil. Place the tomatoes cut-side down on the grill (or grill basket) and cook until the tomatoes are softened and charred, about 4 minutes. Flip once and continue to cook for 1 to 2 minutes more. This is my great-grandmother's recipe, so it's like a million years old. These are the original and authentic Southern Mexico style chilaquiles. This version is very popular as a Sunday breakfast. Believed to cure bad hang-overs.

12 dry and hard tortillas
3 eggs
4 large tomatoes
1/2 cup water
1 large white onion, finely chopped
1 garlic clove
3 chiles de arbol
5 tablespoons corn oil
1 cup of grated oaxaca cheese

Steps:

  • Boil tomatoes and chiles until soft.
  • Mix them in blender with the garlic and water.
  • Heat 1 tbsp of oil and fry this paste, lower the heat and simmer for 5 minutes. Season to taste with salt.
  • Cut the tortillas in strips with a pair of kitchen scissors.
  • Heat 4 tbsp of oil and fry the tortilla strips until crispy.
