Time 35m

Yield 30 serving(s)

1 teaspoon vanilla
1 teaspoon lime zest
2 1/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt

2 tablespoons green decorator sugar (I used regular sugar)

  • Beat butter, sugar, and confectioners' sugar until fluffy.
  • Beat in egg yolks, vanilla, and lime zest. Whisk flour, baking powder, and salt and stir into the butter mixture.
  • Chill 30 minutes (I skipped this step). Roll tablespoonfuls into balls and flatten and sprinkle with coarse sugar and bake at 350 for 15 to 20 minutes.

Tips:

  • For the best flavor, use fresh limes. If you don't have fresh limes, you can use bottled lime juice, but the flavor will not be as strong.
  • To make sure the cookies are chewy, don't overmix the dough. Mix just until the ingredients are combined.
  • If you want the cookies to be extra chewy, chill the dough for at least 30 minutes before baking.
  • Bake the cookies until the edges are just starting to brown. If you bake them too long, they will be dry.
  • Let the cookies cool on a wire rack before serving. This will help them to set and firm up.

Conclusion:

These limeade cookies are a delicious and refreshing treat that are perfect for any occasion. They are easy to make and can be enjoyed by people of all ages. The combination of lime and sugar creates a sweet and tangy flavor that is sure to please everyone. So next time you are looking for a simple and delicious cookie recipe, give these limeade cookies a try.
