LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

LIME COTTAGE SALAD
This is a refreshing summer salad that goes with just about anything. This does not have as many ingredients as some do, but it is sooo good, and very easy to make as I usually have all three of the ingredients on hand most of the time. It is a pretty green and I just love it. We all do. I make it all year long. If you make it with the sugar-free jello and low-fat cottage cheese, it is a great Weight Watcher dish. I have used both kinds, and they both taste the same. It has only 1-2 points per serving.

SIMPLE LIME SALAD DRESSING
We recently stayed in a villa in Bali. The cook made this dressing a couple of times to go over a salad of mixed greens tomatoes and cucumber. She included mint in the salad-not the dressing. Her recipe was actually just equal quantities of lime juice, white (not palm) sugar, and olive oil, garlic and slat and pepper, so it's super easy to make enough for 1 or 12.

Steps:
- Pull the lettuce leaves from the head, rinse gently under cold water, and lay out on clean towels to dry. Use a spoon to remove the flesh in 1 piece from each half of the avocado. Thinly slice the avocado flesh into thin wedges.
- Whisk together all the dressing ingredients.
- Arrange the lettuce leaves on a plate and top with the avocado wedges, scallion, and cilantro. Finish with a healthy drizzling of the dressing.
Tips:
- Choose the right limes: Key limes are the traditional choice for lime salad, but Persian limes or regular limes can also be used. Look for limes that are green and firm, with smooth skin and no blemishes.
- Prep your limes properly: Before using, wash the limes thoroughly and dry them well. Then, remove the zest from the limes using a microplane or zester. Finally, cut the limes in half and juice them.
- Use fresh herbs: Fresh herbs, such as cilantro, mint, and basil, add a bright, vibrant flavor to lime salad. Chop the herbs finely before using.
- Don't skimp on the dressing: The dressing is what really makes lime salad sing. Use a combination of lime juice, olive oil, honey, and Dijon mustard. Season the dressing to taste with salt and pepper.
- Chill the salad before serving: Lime salad is best served chilled. This allows the flavors to meld and the salad to become more refreshing.
Conclusion:
Lime salad is a refreshing, flavorful salad that is perfect for summer. It is also a healthy salad, as it is packed with vitamins and minerals. With its bright, zesty flavor and crunchy texture, lime salad is sure to be a hit at your next party or potluck. So next time you are looking for a light and refreshing salad, give lime salad a try.
