LIME MINT SORBET

Yield Makes about 1 quart

Number Of Ingredients 3

1 1/4 cups sugar
1/3 cup firmly packed fresh mint
3 cups fresh lime juice (about 18 limes)

Steps:

  • In a small saucepan combine the sugar and 1 cup water, bring the mixture to a boil, stirring until the sugar is dissolved, and remove the pan from the heat. Let the syrup cool. In a blender purée the mint with the syrup, stir in the lime juice, and in a bowl chill the mixture, covered, for 1 hour, or until it is cold. Freeze the mixture in an ice-cream freezer according to the manufacturer's instructions.

Tips:

  • Use ripe limes: The riper the limes, the more juice they'll produce and the more flavorful your sorbet will be.
  • Zest the limes before juicing them: This will release the essential oils from the peel and give your sorbet a more intense lime flavor.
  • Use fresh mint leaves: Fresh mint leaves will give your sorbet a refreshing, minty flavor. If you don't have fresh mint leaves, you can use dried mint leaves, but they won't be as flavorful.
  • Sweeten the sorbet to your taste: The amount of sugar you add to your sorbet will depend on how sweet you like it. Start with 1/2 cup of sugar and add more to taste.
  • Chill the sorbet thoroughly before serving: This will help it to firm up and scoop more easily.

Conclusion:

This lime mint sorbet is a refreshing, delicious, and easy-to-make summer treat. It's perfect for a hot day or as a dessert after a meal. The combination of lime and mint is classic and always refreshing. The texture of the sorbet is smooth and creamy, and it's not too sweet. This sorbet is also a good source of vitamin C, making it a healthy snack or dessert option.
