LEMON OR LIME MERINGUE COOKIES

Lemon or Lime Meringue Cookies image

an easy and very low fat cookie that is suitable for passover. Using citrus juice stabilizes the meringue so you don't need cream of tartar or vinegar. This makes a light cookie that is chewy inside- if you'd like a drier meringue you can bake at 250 for an hour then turn the oven off and leave it in for another hour- those taste more like the meringues you can buy at the store

Time 2h50m

Yield about 4 dozen cookies

Number Of Ingredients 6

2 large egg whites, at room temperature
1/2 teaspoon cream of tartar
2/3 cup superfine granulated sugar
1 teaspoon vanilla extract
1 cup semisweet chocolate chips or finely chopped semisweet chocolate
1 cup finely chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper. Set aside.
  • In the bowl of an electric mixer, beat egg whites until foamy. Add the cream of tartar and beat until fluffy but not at all dry. (Be careful not to over beat.) Add the sugar gradually, about 3 tablespoons at a time. When 1/2 of the sugar has been added, add the vanilla extract. Continue beating and adding remaining sugar in batches, until all of the sugar is dissolved and the meringue is very shiny and tight. Gently fold in the chocolate chips and chopped nuts. Working one teaspoon at a time, push a teaspoonful of meringue from the tip of 1 teaspoon with the back of another teaspoon onto the lined baking sheets, leaving 1-inch of space between cookies. Place baking sheets in the preheated oven and turn the oven off. Leave the cookies (undisturbed) in the oven for at least 2 hours and up to overnight, or until cookies are crisp and dry.

Tips:

  • Use fresh limes for the best flavor. The zest and juice of the limes will give the kisses a bright and tangy flavor.
  • Make sure the egg whites are at room temperature before you start whisking them. This will help them reach their full volume and give the kisses a light and airy texture.
  • Gradually add the sugar to the egg whites while you are whisking them. This will help prevent the egg whites from becoming grainy.
  • Whisk the egg whites until they are stiff peaks. This means that when you lift the whisk out of the bowl, the peaks of the egg whites will stand up straight.
  • Pipe the kisses onto a parchment paper-lined baking sheet. This will help them keep their shape and prevent them from sticking to the pan.
  • Bake the kisses in a preheated oven at 200°F for 1 hour and 15 minutes. This will help them dry out and become crispy.
  • Let the kisses cool completely before you fill them with the lime curd. This will help prevent the curd from melting.

Conclusion:

Lime meringue kisses are a delicious and easy-to-make cookie that is perfect for any occasion. They are light and airy, with a sweet and tangy flavor. The lime curd filling adds a burst of citrus flavor that takes these cookies to the next level. If you are looking for a unique and delicious cookie to try, lime meringue kisses are the perfect choice.
