JALAPENO-LIME-GARLIC JELLY
This is the ultimate flavor combination. Uses are endless from a topping for cream cheese to a grill sauce for lamb chops or mix well with sour cream for a dip for quesadillas! The pretty green color comes from the zest of the lime, not food coloring. You can make this as spicy as you like by including the pepper's seeds and membranes, or not. The 24 hour cooking time is just the time it takes for the jelly to set up. Enjoy!

- Stir in the pectin and boil for 1 minute, stir well and then remove from the heat.
- Fill the jars to within 1/4" from the top, wipe the tops and rims clear of any spills and place lids on, and tighten.
- Should set within 24 hours and then they're ready to be enjoyed.
MOJITO JELLY - LIME AND MINT JELLY
Came up with this when making Dandelion Jam and drinking a mojito. Try some on a fresh grilled tuna steak, lamb or pork chops, melt and mix into a fruit salad, add to home made salad dressing or add to a salsa... Great for gift giving.

Tips:
- Use fresh limes: Fresh limes will give your jelly a brighter flavor than bottled or store-bought lime juice.
- Zest your limes before juicing them: The zest of a lime is packed with flavor, so be sure to zest your limes before juicing them. This will add a lovely citrus flavor to your jelly.
- Use a good quality pectin: Pectin is what gives jelly its thick, spreadable consistency. Be sure to use a good quality pectin, such as Certo or Sure-Jell.
- Follow the recipe carefully: Jelly making is a precise process, so be sure to follow the recipe carefully. If you don't, your jelly may not turn out properly.
- Let the jelly cool completely before serving: Jelly needs to cool completely before it can be served. If you try to serve it warm, it will be runny and won't hold its shape.
Conclusion:
Lime jelly is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. Whether you are looking for a quick and easy dessert or a special treat to serve at your next party, lime jelly is a great option.
