Coconut Lime Shrimp W/ Mango Jalapeno Dipping Sauce image

I was looking for recipes to use up the jalapeños I'm growing, plus the mangoes, shrimp, and limes that I had on hand. I found this one, hope you enjoy it as much as we did. We did fry them, but they can also be baked in a 475°F oven and still come out crispy.

Using tongs, slide shrimp into medium bowl and toss with reserved marinade. Sprinkle with cilantro and serve.

Tips:

  • Fresh ingredients: Use the freshest shrimp and limes you can find. This will give your shrimp the best flavor.
  • Don't overcook the shrimp: Shrimp cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and rubbery.
  • Use a good quality olive oil: Extra virgin olive oil is the best choice for this recipe. It has a fruity flavor that will complement the other ingredients in the dish.
  • Add the jalapeños to taste: If you want a spicy dish, add more jalapeños. If you prefer a milder flavor, use fewer jalapeños or omit them altogether.
  • Serve immediately: This dish is best served immediately after it is cooked. The shrimp will be hot and juicy, and the lime and jalapeño flavors will be at their peak.

Conclusion:

This lime and jalapeño shrimp recipe is a quick and easy way to make a delicious and impressive meal. The shrimp is cooked in a flavorful marinade of lime juice, olive oil, garlic, and jalapeños.
