BAKED SCALLOPS WITH LIME

Baked Scallops With Lime image

From Runners World Magazine. The original recipe called for 1/2 cup of white wine but I like it with a little less.

Provided by Babs7

Categories     < 30 Mins

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

2 lbs sea scallops (fresh or thawed from frozen)
1/2 cup chopped fresh basil
1 teaspoon lime zest or 1 teaspoon lemon zest
1/2 teaspoon cumin
2 tablespoons extra virgin olive oil
1 tablespoon fresh squeezed lime juice
1 teaspoon kosher salt
black pepper, to taste
3/4 cup Italian breadcrumbs
1/4 cup white wine
1/4 cup olive oil

Steps:

  • Preheat over to 400 degrees.
  • Rinse the scallops and pat dry.
  • Remove and discard each "foot" (tough piece on the side of each scallop).
  • Put the scallops in a glass bowl and toss with basil, zest, cumin, olive oil, lime juice, salt, and pepper.
  • Place scallops in a baking dish.
  • Sprinkle the wine over the top.
  • Lightly cover the scallops with bread crumbs.
  • Drizzle olive oil over the top.
  • Bake at 400 degrees for 20 to 25 minutes until the scallops are cooked though and tops are nicely browned.

Tips:

  • Mise en Place: As with any recipe, having all of your ingredients prepped and measured before you start cooking will make the process go much smoother. This is especially important for this recipe, as the scallops cook very quickly.
  • Choose Fresh Scallops: The fresher the scallops, the better they will taste. Look for scallops that are plump and have a slight briny smell. Avoid scallops that are slimy or have a strong fishy odor.
  • Sear the Scallops Properly: Searing the scallops over high heat will help to create a nice crust and prevent them from becoming rubbery. Be sure to sear the scallops for only 1-2 minutes per side, or until they are golden brown.
  • Make the Wasabi Cream Sauce Ahead of Time: The wasabi cream sauce can be made up to 2 days in advance. This will give the flavors time to meld and develop.
  • Use High-Quality Fettuccine: The fettuccine is an important part of this dish, so be sure to use a good quality pasta. Look for fettuccine that is made with durum wheat and has a slightly rough texture.
  • Garnish with Fresh Herbs: Fresh herbs, such as chives, parsley, or cilantro, will add a pop of color and flavor to the dish.

Conclusion:

This lime glazed scallops on creamy wasabi fettuccine is a delicious and elegant dish that is perfect for a special occasion. The scallops are perfectly seared and the wasabi cream sauce is rich and flavorful. The fettuccine is the perfect complement to the scallops and sauce. This recipe may seem challenging, but with a little planning and effort, you can easily create a meal that will impress your friends and family.
