1 ½ pounds pork chops
2 tablespoons butter
1 tablespoon olive oil
3 tablespoons lime juice
2 teaspoons garlic powder

Steps:

  • Mix salt, Italian seasoning, black pepper, chili powder, 1/4 teaspoon garlic powder, paprika, and onion powder together in a bowl. Sprinkle spice mixture generously on both sides of pork chops.

1/3 cup olive oil
2 (12 to 16-ounce) bone-in pork loin chops
Salt and freshly ground pepper
2 pinches crushed red pepper flakes
1 cup maple syrup

Steps:

  • Preheat oven to 500 degrees F.
  • In a large oven-safe saute pan over high heat, heat the olive oil until oil ripples. Season pork chops on both sides with salt and pepper and crushed red pepper flakes. Sear the chops, presentation side down, until browned. Then flip and cook until the other side is browned. If the chops are more than 2 inches thick, sear them on the sides as well, using tongs to hold them.

3 to 4 pounds boneless, skinless pork shoulder, trimmed of big hunks of fat and cut in half
8 large garlic cloves, finely chopped
3 tablespoons minced fresh ginger (from one 3-inch piece)
1 teaspoon red-pepper flakes, plus more to taste
2 teaspoons finely grated lime zest and 2 tablespoons juice (from 1 lime), plus more lime wedges for serving
1 cup tamari or low-sodium soy sauce (see Tip)
1 cup honey
1 tablespoon toasted sesame oil

Steps:

  • Place the pork in a 6- to 8-quart slow cooker. Scatter the garlic, ginger, red-pepper flakes and lime zest over the top.
