That just means there's more for the rest of us.

LIME GELATIN SALAD I

Lime Gelatin Salad I image

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

LIME JELLO SALAD

Lime Jello Salad image

A favorite summertime (or anytime) jello salad of ours. Very refreshing. Great served as an accompaniment to a barbecue or a brunch.

Provided by Bobbie

Categories     Low Protein

Time 1h30m

Yield 8-10 serving(s)

Number Of Ingredients 7

1 (6 ounce) package lime Jell-O gelatin
1 1/2 cups hot water
cold water
8 ounces cream cheese, softened
12 ounces Cool Whip
20 ounces crushed pineapple, drained but save juice
1 cup chopped walnuts

Steps:

  • Combine jello and hot water; stir until jello is dissolved.
  • Add enough cold water to pineapple juice to equal ½ cup and stir into the jello. Chill until partially set; then whip with a mixer. Set aside.
  • In another bowl, beat the cream cheese. Add pineapple, beating briefly.
  • Fold in Cool whip and nuts - then combine with the jello mixture and chill until firm.

Tips:

  • Use fresh limes for the best flavor. Limes that are slightly green are more tart, while limes that are more yellow are sweeter.
  • If you don't have lime gelatin, you can use lemon gelatin instead. However, the flavor will be slightly different.
  • Be careful not to overcook the gelatin. Overcooked gelatin will be tough and rubbery.
  • Let the gelatin cool completely before adding the fruit and vegetables. This will prevent the gelatin from melting.
  • Use a variety of fruits and vegetables to make your salad more colorful and flavorful. Some good options include strawberries, blueberries, raspberries, oranges, pineapple, celery, and carrots.
  • Serve the salad chilled. This will help the gelatin to set properly.

Conclusion:

Lime gelatin salad is a refreshing and delicious salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its bright green color and tangy flavor, this salad is sure to be a hit at your next party or gathering.
