4 tablespoons olive oil
2 limes, juiced
4 skinless, boneless chicken breast halves - cut into 1 inch cubes
1 pound fresh mushrooms, quartered
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup chopped fresh cilantro
1 (16 ounce) package linguini pasta

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • Heat a large, non-stick skillet over medium high heat. Add olive oil and chicken, and saute slightly. Add mushrooms and peppers; saute until peppers are soft but crisp. Stir in lime juice and cilantro.
  • Drain pasta, and transfer to a large serving bowl. Top with chicken mixture, and toss slightly. Garnish with lime slices.

If going veggie simply omit the chicken, you'll get fewer servings without it (just so you know).

4 ounces dried whole wheat rotini pasta
1/4 cup lime juice
1/4 cup fresh cilantro leaves
2 tablespoons olive oil
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 lb skinless chicken breast half
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 cups grape tomatoes, halved
1 cup finely chopped red onion (1 large)
1 medium mango, seeded, peeled, and cut into 1/2-inch pieces
1 medium avocado, seeded, peeled, and cut into 1/2-inch pieces
3/4 cup chopped yellow sweet pepper (1 medium)
3/4 cup chopped sweet red pepper (1 medium)
1 fresh jalapeno pepper, seeded and finely chopped (optional)

Steps:

  • Cook pasta according to package directions; drain.
  • Meanwhile, for dressing, in a blender combine lime juice, cilantro, oil, sugar, 1/2 teaspoon salt, garlic powder, cumin, and cayenne pepper. Cover and blend about 30 seconds or until well mixed. Set aside.
  • Lightly coat the rack of an indoor electric grill with cooking spray. Preheat grill. Sprinkle chicken with 1/2 teaspoon salt and black pepper. Place chicken on grill rack. If using a grill with a cover, close lid. Grill until chicken is no longer pink (170 degrees F). (For a covered grill, allow about 6 minutes. For an uncovered grill, allow 12 to 15 minutes, turning once halfway through grilling.) Cut chicken into bite-size pieces.
  • In a large bowl combine pasta, chicken, tomatoes, red onion, mango, avocado, sweet peppers, and jalapeno pepper. Pour dressing over pasta mixture; toss gently to coat. If desired, serve with lime wedges.

1/4 cup soy sauce
1 tsp chili paste
4 scallions, chopped, green and white parts kept separate
1/4 cup red wine
3 cloves garlic, peeled and minced
1 tbsp minced ginger
1/4 tsp black pepper
4 boneless chicken breast halves (1 lb)
8 oz linguine
2 tbsp Dijon mustard
2 tbsp rice vinegar
1 tbsp sesame oil
3 tbsp canola oil
1 red bell pepper, cored, seeded and julienned
3 bunches watercress
2 mangoes, cubed
2 tsp fresh lime juice
Vegetable-oil cooking spray

Steps:

  • Preheat broiler. For marinade, combine soy sauce, chili paste, scallion whites, red wine, garlic, ginger, and black pepper in a bowl. Add chicken and let marinate. Cook pasta in salted boiling water until al dente; drain. For dressing, whisk together mustard, vinegar, sesame oil, and 2 tbsp canola oil. Toss pasta, red pepper, watercress and all but 2 tbsp scallion greens with dressing. In a blender, puree mangoes, lime juice, and remaining 1 tbsp canola oil. Coat broiler pan with cooking spray and add chicken in a single layer. Broil 6 to 7 minutes per side, until browned and cooked through. Cut breasts diagonally in half. On each plate, place 1/4 pasta and 2 pieces chicken. Drizzle with mango puree and garnish with remaining scallion greens.

I really loved my friend's lemon chicken pasta recipe. Unfortunately, the only ingredients I had from her recipe was chicken & pasta. So I substituted most of the ingredients. Surprisingly, it was simply great and everyone liked this one more than the original. I make this over the summer months and this is definitely our favorite pasta recipe. My sister-in-law likes it so much that every time she has a dinner party, she makes this. Everyone who tries it asks for the recipe.

1 lb chicken, chopped bite size (I prefer thigh, but breast is good, too)
1 lb pasta (penne or ziti works great)
2 -3 avocados
1/4 cup olive oil
1/4 cup green onion, chopped
1/4 cup fresh cilantro, packed and chopped
1/4 cup parmesan cheese, freshly grated (more for topping)
3 tablespoons lime juice
1 lime, zest of (optional)
salt & pepper

Steps:

  • Cook chicken your favorite way. I usually salt and pepper it and saute until no longer pink. Set aside.
  • Cook pasta as the package direction.
  • While pasta is cooking, dice avocados, and make pasta sauce by combining rest of the ingredients.
  • In a large bowl, toss chicken, pasta, sauce, salt & pepper. After the pasta is well mixed, add avocado and toss lightly so avocado doesn't get mashed up.
  • Top with more parmesan cheese.
