1 (16 ounce) package dried lima beans, soaked overnight
2 smoked ham hocks
8 cups water
5 cups shredded cabbage
½ cup butter
1 ½ teaspoons salt
¾ teaspoon ground black pepper
¾ teaspoon garlic powder
1 (28 ounce) can diced tomatoes
1 pound smoked sausage, sliced

Steps:

  • In a large pot, combine the lima beans, ham hocks, water, cabbage and butter. Season with salt, pepper and garlic powder. Bring to a boil, then reduce heat to low and set a lid on top but leave a crack for steam. Simmer for 1 1/2 hours. 1 cup chopped green pepper
4 garlic cloves, minced
2 teaspoons olive oil
1 package (16 ounces) reduced-fat fully cooked smoked Polish sausage, cut into 3/4 slices
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1/2 cup packed brown sugar
1/4 cup cider vinegar
1-1/2 teaspoons ground mustard
1 teaspoon chili powder
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper
2 packages (10 ounces each) frozen baby lima beans
Hot cooked rice

Steps:

  • In a large nonstick skillet, saute the onion, green pepper and garlic in oil for 1 minute. Add sausage; cook and stir 4-5 minutes longer or until sausage is lightly browned. 16 oz package of dry small lima beans
6 Tbsp baking soda
3/4 c yellow onions, chopped
1 Tbsp salt and pepper
1 Tbsp finely chopped garlic
1 lb beef sausage in casing

Steps:

  • 1. In a medium sauce pan put beans and baking soda and cover with water.
  • 2. Bring to a rapid boil then remove from the stove and rinse beans in cold water, removing all baking soda. This step eliminates having to soak the beans overnight.
  • 3. Put beans, onions, garlic and salt & pepper in a medium sauce pan and cover with water.
  • 4. Cut sausage into 2" pieces and add to pot. Bring water to a boil and then reduce heat to a simmer. Continue to simmer until beans are cooked, adding water as needed to keep the beans from sticking.
