Time 2h25m

Number Of Ingredients 7

3 cups flour (divided)
2/3 cups powdered sugar
1/2 tsp salt
12 tbsp unsalted butter
3 cups sugar
8 large eggs
1 cup fresh lilikoi juice

Steps:

  • Extract the juice from lilikoi by cutting it in half then scoop out the contents into a blender.
  • Turn on the blender at low speed for a few minutes to separate the seeds from the pulp and juice. Strain it through a mesh. Measure out 1 cup of the juice and set aside.
  • For the shortbread crust, sift 2 1/2 cups of flour into a large bowl. Also sift in the powdered sugar and salt. Whisk together. Melt the butter and combine it in the bowl until it looks crumbly.
  • Line a 9x13 inch baking pan with parchment paper. Pour in the crumble mixture. Pat down the mixture with your hands or anything with a flat surface. Bake it at 350 degrees Fahrenheit for 20 minutes or until it is a light golden brown. Set aside to cool.
  • To make the lilikoi filling, combine the sugar and flour in a large bowl. Whisk it together. Add in the lilikoi juice and eggs. Mix until it is combined well. Pour the mixture onto the finished shortbread crust.
  • Bake it in the oven for another 25 minute. It will look a little wobbly in the middles, but if the sides are firm, it is ready to take out from the oven. Let it cool for an hour, then chill in the fridge for two hours or more.
  • Cut the lilikoi bars into squares. For clean cuts, wipe your blade in between cuts. Sprinkle or dust on more powdered sugar. Serve and enjoy these onolicious lilikoi bars!

From Nita at Lucky Farm B and B on Kona Coast of the Big Island where I stayed. This same recipe can be done with mango puree and a little lime juice.

Time 25m

Yield 2 1/2 Pints

Number Of Ingredients 4

1 1/2 cups lilikoi juice, passion fruit
4 cups sugar
4 eggs, beaten
4 ounces butter

Steps:

  • Melt butter over medium heat.
  • Mix eggs, suar and juice in a bowl.
  • While stirring constantly, slowly add mix to melted butter and bring to a full rolling boil over medium heat. Use only medium heat so eggs don't coddle.
  • Cook 10-15 minutes to desired consistency.
  • Jar and refrigerate. OR use standard canning methods.

Tips:

  • Selecting ripe passion fruits: Look for passion fruits that are heavy for their size and have a slightly wrinkled skin. Avoid fruits that are too firm or have blemishes.
  • Passion fruit preparation: Cut the passion fruits in half crosswise and scoop out the pulp and seeds with a spoon. Alternatively, you can use a citrus juicer to extract the juice and pulp.
  • Clarifying butter: To clarify butter, melt it in a saucepan over low heat until the milk solids separate from the butterfat. Skim off the milk solids and discard. The clarified butter can be stored in an airtight container in the refrigerator for up to 3 months.
  • Mixing the butter: When mixing the clarified butter, passion fruit purée, and honey, use a whisk or a hand mixer to ensure that the ingredients are well combined.
  • Storing the butter: Store the passion fruit butter in an airtight container in the refrigerator for up to 2 weeks. You can also freeze the butter for up to 3 months.

Conclusion:

Lilikoi butter, also known as passion fruit butter, is a delicious and versatile spread that can be used in a variety of ways. It can be enjoyed on toast, bagels, muffins, and pancakes. It can also be used as a filling for pies, tarts, and cakes. Lilikoi butter is also a great addition to smoothies, yogurt, and ice cream. With its tangy and sweet flavor, lilikoi butter is a surefire hit for any occasion.
