12 hard-cooked eggs
2 oz. PHILADELPHIA Neufchatel Cheese, softened
1/4 cup KRAFT Lite Ranch Dressing
2 Tbsp. chopped CLAUSSEN Kosher Dill Pickles
1 tsp. hot pepper sauce
1/4 tsp. paprika
6 grape tomatoes, each cut into 8 wedges
3 small pitted black olives, cut lengthwise in half, then sliced crosswise

Steps:

  • Cut eggs lengthwise in half. Remove yolks; place in medium bowl. Add dressing, pickles and hot sauce; mix well.
  • Spoon yolk mixture into resealable plastic bag. Cut small corner from bottom of bag; use to pipe yolk mixture into egg white halves. Sprinkle with paprika.
  • Decorate with remaining ingredients as shown in photo, trimming olive pieces as needed.

HALLOWEEN DEVILED TEA EGGS

Number Of Ingredients 13

1/2 cup dark soy sauce
2 tablespoons chili oil
2 tablespoons loose black tea leaves
1 tablespoon Chinese five-spice powder
Kosher salt
1 teaspoon sugar
12 large eggs, at room temperature
3 tablespoons mayonnaise
1 tablespoon Chinese mustard
1/2 teaspoon Sriracha
Freshly ground pepper
Orange gel food coloring
Black sesame seeds, for garnish

Steps:

  • Combine 7 cups water, the soy sauce, chili oil, tea leaves, five-spice powder, 2 teaspoons salt and the sugar in a medium pot over high heat. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and simmer for 10 minutes. Turn off the heat, uncover and let cool completely.
  • Meanwhile, bring a large pot of water to a boil. Gently add the eggs and cook for 7 minutes. Remove the eggs and transfer to a bowl of ice water; let stand until cool to the touch.
  • Once the eggs have cooled, lightly crack the shells all over. The goal here is to make enough cracks to allow the flavor of the soy sauce mixture to steep into the egg. (You can also put them on a kitchen towel and roll gently.) Add the cracked eggs to the soy sauce mixture, making sure they are completely submerged. Refrigerate for 24 hours.
  • Peel the eggs. Cut a small piece off the wide bottom of each egg so it will sit flat, then cut off the top. Scoop out the egg yolks into a small bowl and mash them up with a fork. Stir in the mayonnaise, mustard, Sriracha, a pinch of salt and a few grinds of pepper. Tint orange with food coloring.
  • Pipe or scoop the filling into the egg whites. Sprinkle with black sesame seeds. Refrigerate until ready to serve.

The Lil Devils can be made, of course, with your favorite deviled egg recipe; I'm enclosing the recipe my mother was famous for, and which I've taken over myself. The Lil Devils were first served at a Halloween party for adults in 2007, but these could also be great adapted at a child's party anytime. Also, I'm not great at measuring (nor was she), but the quantities for ingredients are in the right ballpark. As for decorating: let ingredients at hand and your imagination be your guide. In the photo that will be included, I omitted toasting the pine-nuts which is why you can't really see them.

12 hard-boiled eggs, peeled and rinsed
2 tablespoons Dijon mustard
1/4 cup mayonnaise
1 teaspoon mild curry powder
1/8 cup chopped dill pickles or 1/8 cup capers
1/4 teaspoon salt
48 capers
toasted pine nuts
pimentos
fresh dill

Steps:

  • Slice eggs in half, and remove yolks to a separate bowl.
  • Combine mustard, mayonnaise, curry powder and salt with yolks, mashing with the flat end of a large spoon. You may have to adjust mustard and mayonnaise quantities to reflect your taste for moisture of the deviling, and the size of the yolks.
  • Mix in the chopped dill pickle or the capers (if necessary, drain them first).
  • Stuff the egg white "boats" using a spoon. You may stop here and chill in refrigerator until serving, OR you may go on to make the decorated eggs.
  • To decorate the Lil Devils: the capers become eyes, the pine nuts and pimento become noses, more pimento for mouths and for devil horns. The dill serves as hair and as beards. Create some Devils as victims, too. Round mouths, the like. Roasted pepper works well as pimento (is really the same thing), just cut or slice it to the shapes you want.

1 lb shrimp, peeled and cooked (reserve 12 for garnish, chop the rest)
1 medium cucumber, peeled and diced
1 teaspoon ketchup
1 teaspoon lemon mayonnaise (add 1/2 teaspoon of fresh lemon to mayonnaise stir)
1 green onion, sliced thin
1 teaspoon salt
1/4 teaspoon pepper
fresh dill or fresh thyme sprig

Steps:

  • Carefully slice hard boiled eggs in half.
  • Cut and drain cucumber, by letting cucumber sit in a colander for about 5 minutes.
  • Mix all ingredients with egg yolks together, (except reserved shrimp and fresh herbs) gently. Spoon back into empty hard boiled egg shell.
  • Gently place the reserved shrimp on top of the egg yolk mixture, adding a small sprig of fresh herb.
  • Serve with a little toast point or cracker.
