1 pkg. (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
1/3 cup butter
4 medium carrots, peeled and sliced (about 2 cups)
3 medium onions, chopped (about 1 1/2 cups)
8 oz. mushrooms, sliced (about 3 cups)
1/3 cup all-purpose flour
3 1/4 cups Swanson® Chicken Broth
1 tbsp. Dijon-style mustard
1 tsp. dried thyme leaves, crushed or 1 tablespoon minced fresh thyme leaves
1/2 tsp. ground black pepper
3 cups cubed cooked chicken
1 cup frozen peas, thawed
1/4 cup chopped fresh parsley

Steps:

  • 1. Heat the oven to 400°F. Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12-inch square. Press the pastry into a 2-quart round casserole. Trim the excess pastry. Prick the pastry thoroughly with a fork. Place aluminum foil onto the surface of the pastry.

1 cup minced fresh cilantro
1/4 cup fat-free sour cream
2 tablespoons lime juice

Dash cayenne pepper
2 cups frozen corn, thawed
1 can (15 ounces) pinto beans, rinsed and drained

This hearty salad combines all the necessary components for a great dish with the sweet dates complementing the tart Peanut Lime dressing (which is good on any green salad). Sliced grilled blackened chicken is excellent served alongside.

1/4 cup peanuts
1/4 cup vegetable oil or 1/4 cup peanut oil
1/4 cup fresh lime juice
1/2 tablespoon peanut butter
1 teaspoon soy sauce
1 teaspoon sugar
1 small garlic clove, finely chopped
2 tablespoons lime zest
3 small corn tortillas, cut into 1-inch x 1/8-inch long pieces
oil (for deep frying)
1 ear of corn
1 cup dates, chopped into 1/4-inch pieces
14 ounces black beans, rinsed, drained
8 cups mixed greens
8 cups coarsely chopped romaine lettuce
1 avocado
3/4 cup crumbled feta cheese
1/4 cup peanuts, chopped

Steps:
