1 large cauliflower , cut into small florets
sunflower oil , for deep-frying
85g plain flour
1 tbsp cornflour
125ml sparkling water
½ tsp coriander seeds , ground
1 large bunch of flat-leaf parsley , finely chopped
1 garlic clove , finely chopped
zest and juice 1 lemon
1 tbsp small capers
3 tbsp olive oil

Steps:

  • Whisk batter ingredients together, then let it rest while you make the dipping sauce. Mix sauce ingredients together and set aside. Cook cauliflower in boiling salted water for 2 mins, then drain and refresh with cold water.
  • Heat about 10cm depth vegetable oil in a high-sided pan. Once oil is hot, test with a small bit of bread - if it turns golden in 30 secs, it's ready.
  • Dip the dry cauliflower into batter, shake off any excess and place in the hot oil. Fry in batches until golden, about 3 mins, then remove to a plate lined with kitchen paper. Easy, perfectly fluffy cauliflower fritters with fresh parsley and a few warm Middle Eastern spices including cumin, turmeric, and Aleppo pepper (you can use red pepper flakes instead, if you need more heat). These are great right off the pan or at room temperature with the mint yogurt or with a simple splash of lemon juice!

For the Mint Yogurt
1 cup Greek yogurt
½ tsp dried mint
2 tbsp lemon juice
1 tbsp olive oil
½ tsp salt
For the Cauliflower Fritters
1 small cauliflower, (cut into 1 ½-inch florets (3 cups florets))
1 cup all-purpose flour
1 cup fresh parsley, (finely chopped)
1 small onion, (finely chopped (about ¾ cup))
2 eggs
1 ½ tsp cumin
¾ tsp ground cinnamon
½ tsp turmeric
½ tsp Aleppo pepper, ((or ¼ tsp red pepper flakes))
½ tsp baking powder
Kosher salt and black pepper
1 cup sunflower oil

Steps:

  • To make the yogurt, place all the ingredients for the mint yogurt in a bowl. Mix to combine and keep in the fridge until ready to serve.
  • Bring a medium saucepan of salted water to a boil and add the cauliflower. Simmer for 4 minutes, then (making sure to reserve 3 to 4 tablespoons of the cooking water) drain into a colander.
  • Using a fork or a potato masher, crush the cauliflower, then transfer it to a large bowl.
  • Add the flour, parsley, onion, eggs, cumin, cinnamon, turmeric, Aleppo pepper flakes, baking powder, and 1 ¼ salt and a good grind of black pepper. Add 3 tablespoons of the cooking water and mix well to combine.
  • Line a large plate with paper towels.
  • In a large saute pan (about 9 inches wide), heat the oil. Once the oil is hot, carefully spoon 2 to 3 tablespoons of batter per fritter into the oil. You'll need to do this in batches (adding 4 to 5 fritters at a time) so as not to crowd the pan, and use a spatula to keep them apart. Fry for about 4 to 5 minutes, flipping over halfway through, until both sides are golden brown (mine took 2 minutes on each side).
  • Using a slotted spoon, transfer the cooked fritters to the prepared plate and set aside while you continue with the remaining batches.
  • Serve warm or at room temperature, with the mint yogurt on the side.

3 large eggs, lightly beaten
1 tablespoon fresh minced garlic (or to taste)

1 teaspoon lousianna hot sauce (or Tabasco to taste)
1 tablespoon flour (might need a tablespoon more to hold together)

250 g cauliflower (amount depends on how many people you are cooking for. If for two, use about 200-250 grams or two me)
1 shallot
1 small onion
50 g turmeric (or 1 small finger)
4 garlic cloves
1 pinch coriander seed
1 tablespoon ghee
2 stalks celery
1 dash cayenne pepper (substitute with dried chilli flakes for more heat if desired)

Steps:

  • Peel and chop Onion finely.
  • Peel and chop Shallot finely.
  • Dice Celery stalks.
  • Place Shallot and onion and celery aside.
  • Crush Garlic with large flat knife to remove skin.
  • Finely dice Garlic.
  • Peel the small finger of Tumeric with a veggie peeler. Be careful, as if you get Tumeric on your hands it will stain your hands yellow or orange and is hard to remove.
  • Finely dice Tumeric.
  • Place Tumeric, Garlic and Coriander seeds in mortar and pestle and pound until ingredients reach a paste-like state.
  • Steam cauliflower florets in microwave safe container for 3 minutes or until soft.
  • In the meantime, heat Ghee in frying pan.
  • When Ghee has melted, add the Tumeric, Garlic and Coriander seed paste to the Ghee and lightly fry. This releases the fragrant smell of the ingredients, and mellows the flavour.
  • When Ghee is lightly coloured yellow by the Tumeric, and the garlic is softened but not discoloured, add the Shallot, Onion and Celery that was set aside earlier.
  • Fry gently, and add the dash of Cayenne pepper to taste (or dried chilli flakes if desired).
  • When Onion and Celery is soft, clearish and lightly coloured yellow, add the steamed Cauliflower. Cauliflower should be soft enough to break up into tinier portions.
  • Cook for about 3 minutes stirring constantly, or until the Cauliflower is yellow like the rest of the ingredients.
  • Serve hot.
