2 Fuji apples, diced (1/4 inch)
Juice of 1/2 lemon

1/2 cup coarsely chopped walnuts
1/3 cup craisins
1/2 cup plain greek yogurt
Salt and freshly ground black pepper, to taste

  • Mix all ingredients together. Chill for an hour.

Tips:

  • Use fresh, high-quality ingredients: This will make all the difference in the final flavor of your salad.
  • Chop the apple and celery into small, even pieces: This will help them to distribute evenly throughout the salad.
  • Toast the walnuts: This will bring out their flavor and make them more crunchy.
  • Use a light mayonnaise-based dressing: This will help to keep the salad light and refreshing.
  • Serve the salad immediately: This will prevent the apples from turning brown.

Conclusion:

Waldorf salad is a classic for a reason. It's light, refreshing, and packed with flavor. This lightened-up version uses Greek yogurt instead of mayonnaise, making it a healthier option without sacrificing any of the taste. Whether you're serving it as a side dish or a main course, this salad is sure to be a hit.
