This is from Cooking Light, October 1997. The rum glaze will seep into the cake if it's spooned over it while the cake is still warm. Putting here for safe keeping!

LIGHT SPICE CAKE

Light Spice Cake image

This was a favorite of my son's when he was a boy and he still loves it today. It requires no eggs or dairy and is easy to put together. For special occasions, the oil version is slightly more moist, but the applesauce version is very good. Don't really know what the vinegar is for!

Time 40m

Yield 9 serving(s)

Number Of Ingredients 11

1 1/4 cups flour
1 cup brown sugar, packed
1/4 cup cornstarch
1 teaspoon baking soda
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/3 cup applesauce (or oil)
1 tablespoon vinegar
1 cup water

Steps:

  • In 8 inch square pan, mix well flour, sugar, cornstarch, baking soda, allspice, cinnamon, cloves and salt. Add applesauce, vinegar and water. Mix briskly with fork till well blended. Bake at preheated 350 for 30 minutes or till pick in center comes out clean. Cool in pan on rack.

Tips:

  • Use room temperature ingredients. This will help the cake batter mix together more smoothly and evenly.
  • Cream the butter and sugar together until light and fluffy. This will help incorporate air into the batter, resulting in a lighter and more tender cake.
  • Gradually add the eggs to the batter, one at a time. This will help prevent the batter from curdling.
  • Be careful not to overmix the batter. Overmixing can make the cake tough.
  • Bake the cake in a preheated oven. This will help ensure that the cake bakes evenly.
  • Allow the cake to cool completely before frosting. This will help prevent the frosting from melting.

Conclusion:

This light spice cake is the perfect treat for any occasion. It's moist, fluffy, and flavorful, with just the right amount of spice. The cream cheese frosting is the perfect complement to the cake, adding a touch of sweetness and richness. Whether you're serving it for breakfast, brunch, or dessert, this cake is sure to be a hit.
