1/2 cup boiling water
3/4 cup cold water
Sugar substitute equivalent to 3 tablespoons plus 1 teaspoon sugar
1 cup 1% cottage cheese
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 reduced-fat graham cracker crust (9 inches)
1/2 cup 100% strawberry spreadable fruit
8 large strawberries, halved

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in cold water and sugar substitute. Refrigerate until partially set., In a fine strainer, drain the cottage cheese. Place cottage cheese in a blender; cover and process until smooth. Transfer to a bowl; stir in gelatin mixture. Fold in whipped topping. , Pour into crust. Refrigerate until set. 1 9-inch pie shell
2 envelopes unflavored gelatin
1/2 cup granulated sugar
3/4 cup boiling water
2 whole eggs, separated
1/2 ounce crystal light lemonade mix (the amount that would make 1/2 gallon of lemonde)
1 cup crushed ice
1 -2 tablespoon fresh lemon zest

Steps:

  • Bake pie crust as directed on package for crust that will be filled with an unbaked pie.
  • Cool.
  • In small bowl, with electric mixer, beat egg whites until fluffy, about 2 minutes.
  • Gradually add 1/4 cup sugar and beat until egg whites are stiff.
  • Set aside.
  • In food processor or blended, combine gelatin, 1/4 cup sugar and boiling water.
  • Process on High about 40 seconds.
  • Add egg yolks and process another 10 seconds.
  • With food processor running, add Crystal Light powder and crushed ice.
  • Process until smooth.
  • Pour into mixing bowl and gently fold in egg white mixture until well-blended.
  • Pour into baked pie crust.
  • Sprinkle with lemon zest.
  • Chill several hours until set.
  • To serve, slice into wedges and top with fat-free non-dairy topping.

1 (9 inch) low-fat graham cracker crusts
1 (14 ounce) can fat-free sweetened condensed milk
1 (8 ounce) package fat free cream cheese
1/2 cup nellie & joe's key west lemon juice (I'm sure regular lemon or even lime juice will do fine)
8 ounces fat-free cool whip, thawed

Steps:

  • Soften cream cheese and whip together with the sweetened, condensed milk until smooth. Fold in Cool Whip and lemon juice; blend well.
  • Pour into graham cracker crust and chill for several hours or overnight.
  • Filling should be firm.
  • Garnish if desired with additional Cool Whip.

1 9-inch pie crust, baked and cooled
Garnish:
3 fresh mint leaves
1 fresh lemon slice, cut almost in half and twisted

Simple

Lemon Meringue pie is one of my Mom's favorites, but being a diabetic it's not the best for her. Found this lite version in "Taste of Home" magazine and anxious to try it for her. States the diabetic exchange is 1 starch, 1 fat and 1/2 fruit. I can't vouch for that as I don't know how it's figured, but am going to try this just for her. Prep time does not include chilling time. ETA: Corrected size of pudding and jello.

1/2 c fresh lemon juice
1 can(s) eagle brand milk
8 oz cool whip
1 9 inch prepared graham cracker crust

Steps:

  • 1. Mix Lemon Juice with Eagle Brand condensed milk, mix well. Fold in Cool Whip,
  • 2. Prepare Graham cracker per directions, Pour Pie Mixture into cooled crust, Chill 2 hours before serving. May drizzle some sweetened Strawberries over top with a spoon, And, 2 curled thin Lime slices in center for color. Sprinkle a Table spoon of toasted slivered almonds across top. Or, leave plain. Delicious.
