The original recipe was from the Best of Bridges book... Here is how you health it up! This is so delicious... I hope you enjoy it too! Note: Cooking time doesn't include refrigeration. NOTE: THE PHOTO I posted is with the recipe being made with 6 cups of enriched white bread instead of half white and half whole wheat.

Steps:
- Grease an 8x8 pan.
- take 1 1/2 cups of the white bread and 1 1/2 cups whole wheat bread and, alternating, line the bottom of the pan and continue layering until used up (about 2 layers), pressing down and condensing the bread against the pan.
- Dot the cream cheese/fruit over the bread layers, squishing cheese/fruit down slightly.
- Cover with the remaining 1 1/2 cups of white bread and the remaining 1 1/2 cups of whole wheat bread, again alternating so the two types of bread are spread around, again pressing down to create an even top layer.
- Combine the remaining ingredients and pour over bread and cheese.
- Cover with plastic wrap and refrigerate overnight.
- In the morning, remove plastic wrap and bake in oven for 45 minutes that has been preheated to 375°F.
- Serve immediately with additional maple syrup. Refrigerate the leftovers.

LIGHT FRENCH TOAST
Steps:
- 1. Preheat oven to 200 and place cookie sheet. In pie plate, with whisk, beat egg whites, egg, milk, vanilla extract and salt until blended. In 12 in nonstick skillet, melt 1tsp margarine on medium. 2. Dip bread slices, 1 at a time, in egg mixture, pressing bread lightly to coat both sides well. Place 3 or 4 slices in skillet, turn once, cook 6 to 8 minutes or until lightly browned. 3. Transfer French toast to cookie sheet; keep warm in oven. Repeat with remaining margarine, read slices and egg mixture. Serve with maple syrup and fruit.
Tips:
- Use stale bread: Stale bread absorbs the egg mixture better, resulting in a more evenly cooked and flavorful French toast. If you don't have stale bread, you can toast fresh bread slices in the oven for a few minutes to dry them out slightly.
- Use a shallow dish for dipping: This will help to prevent the bread from becoming soggy.
- Don't overcrowd the pan: Cooking too many slices of bread at once will cause them to steam and become soggy. Cook the bread in batches if necessary.
- Use a non-stick pan or griddle: This will help to prevent the bread from sticking and burning.
- Cook the bread over medium heat: This will help to prevent the bread from burning.
- Flip the bread only once: Flipping the bread too often will make it tough.
- Serve the French toast immediately: French toast is best served hot and fresh. If you're not serving it right away, keep it warm in a low oven.
Conclusion:
Light French toast is a delicious and easy breakfast or brunch recipe. It's a great way to use up stale bread, and it can be customized to your liking with different toppings and flavors. Whether you like it classic with butter and syrup, or topped with fruit, nuts, or whipped cream, light French toast is a versatile dish that everyone will enjoy.
