1/2 cup panko (Japanese breadcrumbs)
1/4 cup plus 1 teaspoon olive oil, divided, plus more for brushing
3 tablespoons red-wine vinegar
1 tablespoon plus 2 teaspoons Dijon mustard, divided

8 chicken cutlets (1 1/2 pounds total)
Salt and pepper
8 slices Canadian bacon (1/2 pound total)
4 ounces sliced Swiss
5 ounces tender baby lettuces, such as spring mix (5 cups)

Steps:

  • Heat broiler. In a small bowl, mix together panko and 1 teaspoon oil until coated. In a small jar, combine vinegar, 1 tablespoon mustard, remaining 1/4 cup oil, and pinch of sugar; shake to combine.
  • Season chicken with salt and pepper. On a rimmed baking sheet, make 4 stacks, sandwiching Canadian bacon and Swiss between 2 chicken cutlets. Brush tops with oil, season with salt and pepper, and broil until golden and cooked through, 7 minutes. Spread each stack with 1/2 teaspoon mustard and sprinkle with panko. Broil until panko is golden and toasted, 1 to 2 minutes.
  • Toss lettuces with half the dressing (reserve remaining for Cornbread-Stuffed Shrimp), season with salt and pepper, and serve alongside chicken.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

8 ounces deli ham, sliced thin
4 -6 ounces mozzarella cheese
2/3 cup low-fat milk
1 cup corn flakes, crushed

1/2 teaspoon garlic powder
1/4 teaspoon salt
1 (10 ounce) cream of chicken soup
1/2 cup light sour cream (or yogurt)

4 thin slices prosciutto (about 2 ounces)

Steps:

  • Preheat oven to 350°. Place broth in a small microwave-safe bowl; microwave at high 15 seconds or until warm. Stir in butter and garlic. 4 boneless chicken breasts
4 slice ham (deli sliced or fresh smoked)
4 slice swiss cheese (or whatever type cheese you like)
italian bread crumbs
pam (or other cooking spray)

Steps:

  • 1. Turn on oven to 375 degrees. Spray a small roasting pan with Pam (or other cooking spray).
  • 2. Slice chicken breast lengthwise to make a deep pocket (almost in 1/2). Unfold and layer ham and cheese inside pocket of chicken. Fold chicken to cover ham & cheese. Place filled chicken breasts into roasting pan. Sprinkle top with Italian bread crumbs. Spray with cooking spray.
  • 3. Bake uncovered for 45 min. to an hour (depending on size of chicken breast) until cooked through. Serve with vegetable & garlic bread. Yummy and not over the top in calories!! Note: Can add spinach and/or mushrooms as stuffing to make the chicken yummier, and still be healthy!!
