1/2 teaspoon baking powder

1 cup buttermilk
1/3 cup vegetable oil
1 large egg
3/4 teaspoon vanilla extract
Melted butter (optional for serving)
Syrup (optional for serving)

Steps:

We do not do this in the video; however, after years of feedback from readers, we have determined that whipping the egg white thickens the batter slightly and improves the results for deeper waffle irons.

Steps:

  • Whisk together the flour, cornstarch, salt, baking powder, baking soda, and sugar in a large bowl.
  • In a separate bowl, whisk the buttermilk, oil, and vanilla extract.
  • For the lightest waffles, separate the egg. Whisk the egg yolk into the milk mixture. If you do not plan on separating the egg, whisk the whole egg into the milk mixture.
  • If you separate the egg, add the egg white to another bowl, use a handheld mixer to beat until stiff, and then set aside.

1 large egg yolk
1 tbsp. pure vanilla extract
1 tsp. vanilla bean paste
3 tbsp. vegetable oil
1/2 cup club soda
2 large egg whites

Steps:

  • 1. Preheat waffle iron to medium high heat. Sift together flour, sugar, baking powder, baking soda, and salt into a large bowl.
  • 2. In a medium bowl, whisk together buttermilk, egg yolk, vanilla extract, vanilla bean paste or seeds from one vanilla bean and oil til smooth. Whisk in club soda. Gently whisk the wet ingredients into the dry ingredients just til smooth.
  • 3. In small clean bowl with clean beaters, beat egg whites til they hold firm peaks. Gently fold into the batter til well blended. Pour batter onto waffle iron and cook til deeply golden. Serve waffles at once. The longer the waffles cook, the crisper they will be. if you notice a few pale spots, let them continue to cook til they're evenly browned all over. 1 14-ounce can full-fat coconut milk (about 1 3/4 cups)
1 vanilla bean
1 1/2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt (I like fine-grain sea salt for this recipe)
Your favorite cooking spray (if needed (I have a non-stick waffle maker so I don't need or use any spray))
Pure maple syrup
Butter (or vegan butter)
Fresh berries

Steps:

  • Preheat your waffle maker.
  • If the coconut milk is solidified, place it into a small saucepan and set over low heat. Heat just until liquid, but not warm.
  • Pour coconut milk into a large mixing bowl. Scrape the pulp of the vanilla bean into the coconut milk (discard the pod) or add vanilla bean paste or extract. Stir to combine.
  • Add the flour, sugar, baking powder, and salt. Stir gently with a wooden spoon just until combined (if you overmix, you risk making the waffles tough; don't worry, a few lumps are okay).

6 tablespoons vegetable oil
1 large egg, separated
1 tablespoon sugar
1/2 teaspoon vanilla extract

Steps:

  • Heat the oven to 200°F and heat the waffle iron.
  • Mix the flour, cornstarch, salt, baking powder, and baking soda in a medium bowl.
