Time 35m

Yield 6

Number Of Ingredients 8

5 tablespoons butter, divided
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

LIGHT CREAM OF BROCCOLI SOUP

Light Cream of Broccoli Soup image

From "The Best of America's Test Kitchen". Posted for safe-keeping. From the cookbook: "This soup has all the creaminess and richness of regular cream of broccoli soup, but with less than half the calories and a fraction of the fat." Notes: Large head of broccoli = about 1 1/2 lbs. For a vegetarian soup, you can us all vegetable broth (the soup will taste sweeter.) Do not boil the soup once the half-and-half has been added. Boiling will cause the half-and-half to curdle.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 12

1 large head broccoli, cut florets into 1-inch pieces, enough stalks peeled and chopped fine to make 3/4 cup (discard any remaining stalks.)
1 cup minced onion
1 teaspoon vegetable oil
salt
3 garlic cloves, minced
1 tablespoon unbleached all-purpose flour
1/4 cup dry white wine
1 bay leaf
1 1/2 cups low sodium chicken broth
1 1/2 cups low sodium vegetable broth
1/2 cup half-and-half
pepper

Steps:

  • Combine the chopped broccoli stalks, onion, oil, and 1/2 teaspoon salt in a large saucepan. Cover and cook over medium-low heat, stirring often, until softened, 8 to 10 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.
  • Stir in the flour and cook for 1 minute. Whisk in the wine with the bay leaf and cook until the wine is absorbed, about 1 minute.
  • Whisking constantly, gradually add the broths. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low, and simmer until slightly thickened and the broth no longer tastes of flour, about 5 minutes.
  • Add the florets and continue to simmer, uncovered, until tender, 7 to 10 minutes. Remove the bay leaf.
  • Puree the mixture in a blender (or food processor) until smooth, and return to a clean saucepan. Stir in the half-and-half and cook over low heat until just hot (do not boil), about 3 minutes. Season with salt and pepper to taste and serve immediately.

Tips:

  • For a smoother soup, blend until completely smooth. If you prefer a chunkier soup, blend only until desired consistency is reached.
  • To make the soup ahead of time, let it cool completely, then store in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat over medium heat until warmed through.
  • To freeze the soup, let it cool completely, then store in an airtight container in the freezer for up to 3 months. When ready to serve, thaw overnight in the refrigerator or at room temperature for several hours. Reheat over medium heat until warmed through.
  • For a vegan version of the soup, use vegetable broth instead of chicken broth and omit the butter. You can also use a plant-based milk, such as almond milk or soy milk, instead of the cream.
  • To make the soup even healthier, use whole wheat bread or crackers for serving instead of white bread or crackers.

Conclusion:

This light cream of broccoli soup is a delicious and healthy way to warm up on a cold day. It's also a great way to get your daily dose of vegetables. With just a few simple ingredients, you can have a delicious and satisfying soup that the whole family will enjoy.
