3 cups fresh blueberries
3 tablespoons white sugar
⅓ cup orange juice
⅔ cup all-purpose flour
¼ teaspoon baking powder
1 pinch salt
½ cup butter, softened
½ cup white sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.

1/3 cup butter, melted
2 cups skim milk
1 teaspoon vanilla
30 g fat-free sugar-free instant vanilla pudding mix (1 package)
4 cups frozen blueberries
4 tablespoons Splenda granular (or to taste)
3 tablespoons cornstarch
3/4 cup water, divided
1 1/2 teaspoons cinnamon, divided

Steps:

  • Mix crumbs and 1/2 teaspoon cinnamon, then add melted butter and mix well. Pat into a 9 x 13 pan.
