LIGHT AND EASY GARLIC POTATOES KAFKA

Steps:
- Place potatoes in a 1 1/2 quart casserole.
- Add remaining ingredients and stir to coat.
- Cover with either tightly fitting lid or plastic wrap. (Note: I prefer using the plastic wrap, fitted tightly. Do NOT pierce plastic wrap to vent -- the wrap will end up doming during heating, this is a good thing.).
- Cook at 100% for approximately 8 minutes, 1000 watt oven, or until potatoes are tender. (Microwave cooking is terribly easy, once you get the feel for how cooking times play out in your own oven.).
- If using plastic wrap, prick to release steam. (Please be careful, there is a lot of steam. Don't get a steam burn!).
- Voila! Yum!

Tips:
- Choose the Right Potatoes: Select firm, waxy potatoes like Yukon Gold, Red Potatoes, or New Potatoes. They hold their shape well during cooking.
- Don't Overcrowd the Pan: Give the potatoes enough space to brown and crisp properly. Avoid overcrowding the pan or they will steam instead of fry.
- Use Fresh Garlic: Freshly minced garlic provides the best flavor. If you don't have fresh garlic, use 1/4 teaspoon garlic powder instead.
- Add Herbs and Spices: Feel free to add your favorite herbs and spices to the potatoes for extra flavor. Paprika, rosemary, thyme, or oregano are great choices.
- Don't Skip the Butter: The butter adds a delicious richness and helps the potatoes brown nicely. If you're vegan, you can use olive oil instead.
