Time 40m

Yield 6 servings

Number Of Ingredients 13

2 tablespoons unsalted butter
2 cups chopped fennel bulb, fronds reserved
1 cup chopped yellow onion
4 cups chicken stock, preferably homemade
2 (10-ounce) packages frozen peas
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup creme fraiche
Good olive oil
Croutons (recipe follows)
2 tablespoons good olive oil
2 cups (1/2 inch diced) sourdough bread
Kosher salt and freshly ground black pepper

Steps:

  • Heat the butter in a large saucepan, add the fennel and onion and cook over medium heat for 10 to 15 minutes, until the vegetables are tender. Add the chicken stock, increase the heat to high, and bring to a boil. Add the peas and cook for 3 minutes, until the peas are tender. Off the heat, add the salt and pepper.

Whisk in the creme fraiche and taste for seasoning. Reheat the soup in the saucepan and serve hot with a drizzle of olive oil and some croutons on top.

LETTUCE SOUP WITH CUCUMBER CROUTONS

Lettuce Soup With Cucumber Croutons image

Soup is the most versatile of dishes. When it is rough-chunked, thick and hearty, it is a homey supper; when it is smooth and delicate like the lettuce soup here, it is the perfect elegant starter. It also happens to be a wonderful way of using up any stray lettuces in your fridge. You do not want to use anything that is unpalatable, but I often start the week planning to eat a lot of salad and then end it having not lived up to my intentions. This recipe is the perfect way of atoning for that. This time of year I especially prefer this soup chilled, which makes life much easier because you can cook it in advance. If cold soup is not your thing, do not panic; it is just as good served at room temperature. Either way, this soup is taken up a few notches by being studded, by some cucumber croutons: small, jade cubes cut like toasted-bread dice, only so much more elegant.

Time 30m

Yield About 2 quarts

Number Of Ingredients 9

2 tablespoons butter
6 scallions, white part only, finely sliced
8 new potatoes, peeled and diced
7 cups chicken or vegetable stock
1 pound Boston lettuce, roughly chopped
1/3 to 1/2 cup sour cream
Salt
2 tablespoons finely sliced chives
1 cucumber, peeled, seeded and diced

Steps:

  • Melt butter in a large saucepan, and add scallions. Sauté until softened. Add potatoes to pan, stir well, then add stock. Bring to a boil, then reduce to low, and simmer until potatoes are tender, 15 minutes.

Transfer to a serving bowl, and add 1/3 cup sour cream and salt to taste. Stir until smooth, and adjust sour cream and salt as needed. If soup is to be served chilled (it may be served at room temperature), cover bowl with plastic wrap and refrigerate.

PEA AND LETTUCE SOUP

Pea and Lettuce Soup image

This is a french recipe my mum copied from a library cook book. I make it a bit differently to the original recipe and have included the changes that I have made in brackets. Please let me know if it is confusing. Everone (so far!) loves my adaptation, it has a great flavour and is just so smooth and creamy. We usually eat this with baked vegetables and buttered green beans mixed with chopped fresh tomato. I hope you like this as much as we all do! Cooking time is only approximate as I haven't taken note of this and is for my adapted version.

POTAGE SAINT-GERMAIN

Potage Saint-Germain image

Categories     Soup/Stew     Blender     Food Processor     Leafy Green     Bake     Mint     Leek     Pea     Gourmet

Yield Makes about 8 cups, serving 6

Number Of Ingredients 11

For the croutons
1 1/2 cups 1/2-inch cubes of French or Italian bread
2 tablespoons unsalted butter, melted
For the soup
the white part of 2 leeks, chopped and washed well
2 tablespoons unsalted butter
3 cups chicken broth
4 cups shelled fresh green peas or two 10-ounce packages frozen
4 cups chopped lettuce, rinsed and drained
1/2 cup fresh mint leaves
1/4 cup chilled heavy cream if desired

Steps:

  • Make the croutons:
  • In a bowl drizzle the bread cubes with the butter, tossing them to coat them well, and in a shallow baking dish bake them in a preheated 350°F. oven, stirring occasionally, for 10 minutes, or until the croutons are golden and crisp. Season the croutons with salt. The croutons may be made 1 day in advance and kept in an airtight container.
  • Make the soup:
  • In a large saucepan cook the leeks in the butter over moderately low heat, stirring occasionally, until they are softened, add the broth and 2 cups water, and bring the mixture to a boil. Add the peas and the lettuce and simmer the mixture, covered partially, for 10 minutes, or until the peas are tender. Stir in the mint and in a blender or food processor purée the soup in batches. The soup may be made 1 day in advance and kept covered and chilled. Return the soup to the pan, season it with salt and pepper, and reheat it over moderately low heat, stirring, until it is hot.
  • In a small bowl beat the cream until it is thickened slightly but still pourable and season it with salt. Ladle the soup into bowls, drizzle drops of the cream on each serving, and draw a skewer or knife through the drops, forming decorative patterns. Serve the soup with the croutons.

CHILLED PEA, LETTUCE AND HERB SOUP

Chilled Pea, Lettuce and Herb Soup image

This elegant soup is sweet and heavenly. The texture is silky and the consistency thick -- but only because there are lots of peas in it. I used water rather than stock when I tested this recipe, and it worked just fine.

Number Of Ingredients 11

PEA SOUP WITH PANCETTA AND CROUTONS

Pea Soup With Pancetta And Croutons image

Provided by Amanda Hesser

Categories     soups and stews, side dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

1/4 pound pancetta, cut into tiny cubes
1 clove garlic, mashed
1 leek, trimmed and chopped
4 cups shelled peas
2 cups chicken broth
Kosher or sea salt
1 tablespoon sliced chives
1 tablespoon chopped tarragon
Juice of 1 lemon
1 slice day-old bread, toasted
Extra virgin olive oil

Steps:

  • Spread the pancetta over the base of a medium soup pan and place over medium-low heat. Cook, rendering the fat, until browned on the edges, about 5 minutes. Remove to a paper-towel lined plate. Pour off all but a thin coating of fat. Return to medium heat, and add the garlic and leek. Cook until soft on the edges. Add the peas, broth and 2 cups of water. Season with salt. Bring to a simmer and cook until the peas are just tender, about 5 minutes.
  • Turn off the heat and stir in the chives and tarragon. Let steep for 5 minutes. Ladle the soup in small batches into a blender and purée until smooth (because it is hot, turn the blender on low and hold the lid on tight). Taste and adjust seasoning, adding a little lemon juice to sharpen the flavor. Meanwhile, break the bread into small croutons and toss in a bowl with olive oil, just to coat. Ladle soup into bowls and top each bowl with a little pancetta and a few croutons.

Tips:

  • Choose fresh, crisp lettuce. The fresher the lettuce, the better the soup will be. Avoid wilted or bruised lettuce.
  • Use a variety of lettuces. This will give the soup a more complex flavor. Some good options include romaine, bibb, and red leaf lettuce.
  • Wash the lettuce thoroughly. This will remove any dirt or debris. Be sure to dry the lettuce well before adding it to the soup.
  • Don't overcook the lettuce. Lettuce cooks quickly, so be careful not to overcook it. Overcooked lettuce will become mushy and lose its flavor.
  • Season the soup to taste. Add salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the soup immediately. Lettuce soup is best served immediately after it is made. However, you can also store it in the refrigerator for up to 3 days.

Conclusion:

Lettuce and pea soup is a delicious, healthy, and easy-to-make soup. It's a great way to use up leftover lettuce and peas. This soup is also a good source of vitamins and minerals. So next time you're looking for a quick and easy meal, give lettuce and pea soup a try.
