juice 1 lemon
4 tbsp extra virgin olive oil

SPICY LENTIL AND SAUSAGE SOUP

Spicy Lentil and Sausage Soup image

This hearty soup is peppered with spicy sausage, ground spices and dried herbs, and fresh basil. The lentils are the perfect vehicle to carry the robust flavors from the red wine and hot sauce, and the tomato sauce ties everything together. This soup is rather spicy, so feel free to omit the hot sauce if you'd like to reduce the heat. The sausage can be substituted with vegan sausage or omitted altogether.

Yield Makes 6 cups, serving 4 servings

Number Of Ingredients 20

3 tablespoons extra-virgin olive oil
6 ounces andouille or fresh Mexican chorizo sausage, casings removed, crumbled (see Cook's Note)
1 medium onion, chopped (about 2 cups)
3 small carrots, peeled and thinly sliced (about 1 cup)
2 celery stalks, chopped (about 2/3 cup)
1/2 bell pepper, chopped (about 1/2 cup)
5 garlic cloves, finely chopped
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Kosher salt and ground black pepper
1 dried bay leaf
4 cups low-sodium chicken stock
One 15-ounce can tomato sauce
1/2 cup red wine
1 cup green dried lentils, rinsed
1/2 cup chopped fresh basil
1 tablespoon hot sauce
1 tablespoon lemon juice, lime juice, apple cider vinegar or white wine vinegar
Cooked quinoa, for serving (optional)

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the sausage and cook, breaking into small pieces with a wooden spoon, until browned, 4 to 5 minutes.
  • Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the carrots, celery and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute.
  • Push the ingredients to the sides of the pot to make a well in the center. Add the chili powder, cumin and paprika in the well and toast until fragrant, 1 minute. Season with 1/4 to 1/2 teaspoon salt and 1/2 teaspoon pepper and stir in the bay leaf.
  • Stir in the chicken stock, tomato sauce, red wine and lentils. Increase the heat and cook until boiling, then reduce to a hearty simmer. Cover and cook until the lentils are cooked through, 30 to 35 minutes.
  • Remove from the heat, then stir in the basil, hot sauce and lemon juice. Taste to adjust the seasoning and serve over quinoa if desired.

Categories     Dinner

Number Of Ingredients 10

1 cup green lentils, (black lentils will work as well)
extra virgin olive oil
8 ounces chicken or pork sausage, (casings removed (about 2 to 3 sausages))
1 fennel bulb large or 2 small, (thinly sliced)
1 to 2 large cloves garlic, (grated)
1 yellow onion, (finely chopped)
1 carrot, (grated)
1/2 teaspoon fennel seeds
1/2 cup broth
2 tablespoons red wine vinegar

Steps:

  • In a saucepan, combine the lentils with 3 cups of water. Bring to a boil, then lower the heat and cover part-way to simmer for about 10 minutes (the lentils should be cooked just part-way through (there should be some liquid in the pan still).
  • In a large skillet, heat 1 to 2 tablespoons of extra virgin olive oil. Add the sausage and cook over medium-high heat, tossing regularly and breaking the sausage up with a wooden spoon, until fully cooked and browned.
  • Push the sausage to one side of the skillet and add the fennel, garlic, onion, carrots, and fennel seed. Add broth and red wine vinegar.
  • Add the par-boiled lentils to the sausage and fennel skillet. Bring to a boil, then lower the heat and let simmer, partially covered, for 15 to 20 minutes.
  • Taste and adjust seasoning. To serve, drizzle a bit of extra virgin olive oil on top. Serve immediately with your favorite crusty bread

LENTILS AND SPICY SAUSAGES

Categories     One Dish Meal

Time 50m

Yield 4 serving(s)

Number Of Ingredients 16

1 yellow onion, diced
2 carrots, small diced
1 stalk celery, small diced
2 teaspoons minced garlic
2 tablespoons olive oil
1 1/2 cups dry green lentils, rinsed
1 quart chicken stock
1 1/2 teaspoons fresh minced rosemary
1 teaspoon dried thyme
1 bay leaf
1 teaspoon Dijon mustard
splash red wine vinegar
1/2 teaspoon smoked paprika
salt
pepper
1 lb hot Italian sausage, about 4 large links (can sub mild Italian)

Steps:

  • Heat the oil over medium heat in a large heavy-bottomed pot or dutch oven. When hot, add the onion, carrot and celery. Saute for five minutes, stirring frequently, then add the garlic and continue sauteing for another two minutes.
  • Add the fresh rosemary, dried thyme, bay leaf, smoked paprika, salt, pepper and lentils. Mix well then pour in the stock. Bring to a boil, then reduce heat and simmer for about 25 minutes until lentils have absorbed most of the liquid. Stir in the Dijon mustard and red wine vinegar and continue simmering until all the liquid has been absorbed. Adjust seasonings with salt and pepper.
  • Meanwhile, preheat the oven to 425 degrees. Place sausages on a foil-lined baking sheet and lightly mist with cooking spray. If you don't have cooking spray, brush lightly with olive oil. Place in the oven and roast for 15-20 minutes, flipping midway through. The sausages should appear to be crispy and golden.
  • When the sausages are finished roasting, place in the pot with the lentils and serve together.

Spicy-Sausage and Lentil Stew With Escarole Salad image

A classic flavor pairing: lentils and greens together with spicy sausage meat make for a hearty stew.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 1h

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil, plus more for drizzling
12 ounces spicy Italian sausage, removed from casing
2 medium carrots, peeled and finely chopped (3/4 cup)
1 small onion, chopped (1 cup)
4 cloves garlic, minced (2 tablespoons)
Coarse salt and freshly ground pepper
2 tablespoons tomato paste
3 cups low-sodium chicken broth
1 cup brown lentils, rinsed and drained
1 small head escarole, thinly sliced (5 cups)
1 tablespoon fresh lemon juice

Steps:

  • Heat 1 tablespoon oil in a large pot over medium-high. Add sausage, carrots, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally and breaking up sausage into bite-size pieces, until meat is no longer pink, about 5 minutes. Stir in tomato paste; cook, stirring, 1 minute. Add broth, 3 cups water, and lentils. Bring to a boil. Cover, reduce heat to low, and simmer until lentils are tender, about 30 minutes.
  • Meanwhile, toss escarole with lemon juice and remaining 1 tablespoon oil in a large bowl. Season with salt and pepper. Top stew with escarole salad, drizzle with more oil, and serve.

Tips:

  • Choose the right lentils: Different types of lentils have different cooking times and textures. For this recipe, brown or green lentils are good choices.
  • Use good quality spicy sausages: The flavor of the sausages will greatly impact the overall taste of the dish. Look for spicy sausages that are made with high-quality meat and spices.
  • Don't overcrowd the pan: When cooking the sausages, make sure to not overcrowd the pan. This will prevent them from cooking evenly.
  • Add vegetables for extra flavor and nutrition: Feel free to add your favorite vegetables to the dish, such as chopped carrots, celery, or bell peppers.
  • Season to taste: Don't forget to season the dish with salt and pepper to taste.

Conclusion:

This recipe for lentils and spicy sausages is a great way to enjoy a delicious and satisfying meal. The lentils are a good source of fiber and protein, while the spicy sausages add a flavorful kick. The dish is also easy to make and can be tailored to your own preferences. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
